Happy WIAW!! Let’s get this party rolling shall we?!
I’ve pretty much stuck to what I know works when it comes to breakfasts. My love for coconut flour pancakes is going strong, although I am starting to get close to the bottom of my bag, and that’s freaking me out just a bit!

What is it about pancakes that are just so darn comforting? I wasn’t one of those kids who got pancakes every weekend, so I’m not sure why I feel such strong comfort from them. Maybe it’s just the fluffiness. I was actually more of a waffle kid growing up. Let go my Eggo!!
Lunch was, how do I put this, HUGE. I mean it took up the entire plate, which is bigger than my face. I guess I was really hungry or something.

Would you guys look at me funny if I told you this only held me over for about an hour? Seriously, I kid you not. I was typing up some articles and BAM! Hungry belly. I made some peppermint tea instead, thinking there was no way on earth I could actually be hungry, but the nagging little grumble in my belly refused to go away. So I gave in and grabbed a small snack
brown rice cake + 1/2 bag of wholly guacamole
Look at my little monster begging in the background!! She learned that from Opie for sure. Opie is the begging QUEEN. That dog knows how to put on a show.
Dinner was just something simple I threw together. Ninja of course got something else. He doesn’t dare touch my crazy bowls filled with random stuff. Especially when it’s stuffed with spaghetti squash. God can you please send me a friend who appreciates this stringy veggie as much as I do?! On second thought, don’t. I’m not good at sharing anyway.

I really am developing a slight obsession with these chicken sausages. They are just so easy to cook up and make the perfect protein for work lunches. I had Ninja try one and he hated it though. Of course.
And because I can’t seem to go to sleep without something to please my sweet tooth, I decided to slice up a piece of my Pumpkin Carrot Bread for dessert.

Your meals look absolutely fantastic to me! The egg/quinoa combo sounds like a great idea. I’d come share some spaghetti squash with you! You should try the squash bake I posted last week. A few other bloggers have given it a try, and (surprisingly) husbands liked it, too!!

Normally I end my day with something sweet, but I have been TRYINGGG to stay away from sweets. I have finished the cookies and one of the chocolate bars you sent me. And I HAD to give some chocolate to the man, I woulda eaten it all! HAHA. YUM to that asparagus. I need you to make me those pancakes.
I pretty much always have something sweet after dinner. Tonight was a Reese’s peanut butter cup, followed by a bowl of peanut butter cherrios and milk.
I love spaghetti squash, especially with some spicy chicken sausage, so so good!
