Thank goodness we are halfway through the week. I had a bit of a frustrating day yesterday, where literally anything and everything that could possibly go wrong…did. By the time night fell, I was beyond exhausted, frustrated and annoyed, and crawled into bed at 9pm just so that Tuesday could be over faster. I hate days like those. But today is a new day, and it’s filled with all new opportunities, so I’m leaving yesterday behind and looking forward to today 🙂
A frustrated ginger is a crazy ginger, and trust me when I say no one wants to be around that!
Just cant get enough of…Waffles. I’m sure you aren’t surprised with this one. I’ve been making all sorts of versions lately, whether it be my Coconut Flour Protein Waffle for breakfast or my 4 Ingredient Waffle for a post workout snack.
I’ve also been trying out some peanut flour versions, but good Lord does that stuff stick to the griddle! That was one of my annoying adventures yesterday that I was alluding to above. I literally couldn’t even get my waffle iron open it was so stuck! Not one of my finer moments in the kitchen…
Just can’t get enough of…Hummus. I’m pretty finicky about my hummus, but once I find one that I like, I pretty much latch on to that stuff like my life depends on it. I also eat it every chance I can get, whether it be on toast, atop a salad or as a pool for my baby carrots.
Lately, it’s been Mary’s crackers. I picked both of these up at Costco (hence the size of the tub) and OMG I can’t decide if it was the best decision or worst decision of my week. I literally can’t stop eating this stuff.
Just can’t get enough of…Annie’s Cheddar Bunnies. Would you believe I had never tried these little cuties before? Well, I guess now I can see why. I’m the crazy cheese lady (my nickname was Rat growing up for a reason) and it seems that I don’t know how to stop at one serving with these things.
Just can’t get enough of…Mexican Sweet Taters. Obviously I’m not talking about sweet potatoes from Mexico, but rather the flavors.
I literally have some form of these meal every week. Sometimes there’s peas, sometimes I use feta, sometimes I don’t have guac, but the Mexican flavors remain. I’ve even gotten a little bit crazy and added some hummus instead of guacamole.
Just can’t get enough of…Chocolate Covered Strawberries. I’m not sure if it’s my inner Valentine coming out a tad bit early or the fact that these strawberries are just too big & juicy not to dunk in chocolate, but I’ve been making a set of these almost nightly.
I just melt up some dark chocolate chips, dunk in a few berries, set them in the fridge to harden, and lick the remaining chocolate out of the bowl I used to melt the chips. I don’t mess around when it comes to chocolate people. Got to make sure none of it goes to waste!
