For breakfast I was really craving pancakes, but I wanted to use up some of the coconut flour Bestie bought me. Enter in these delicious babies!
Coconut Flour Mini Cakes
makes 8-10 mini cakes
- 3 large eggs
- 4 Tablespoons organic coconut flour
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1 tsp cinnamon
- stevia
Whip eggs well, then add remaining ingredients. Keep stirring until almost all lumps are removed. Heat pan, then stir again. Batter will be super thick. Pour into pan by tablespoons.![]()

So fluffy and delicious!! I love coconut flour because I love the subtle hint of coconut flavoring in each bite. Of course you could easily mask it by adding pumpkin, cocoa powder, or another flavoring, but these are amazing as is!
After breakfast I ran some errands, then came home to get my sweat on
10 in 20 Workout
squats
jump squats
bw lunge
jump lunge
pushups
burpees
high knees
floor jacks
mountain climbers
knee tucks
Do 10 reps of each move. Rest as needed after last move. Do as many sets as you can in 20 minutes.
Simple yet effective. Am I the only one who loves workouts like this?!

Dinner was super tasty, and an old family recipe. My mom made this dish for me about once a week when I was growing up. It was fun to make it my own!
Mom’s Goulash

1/2lb ground turkey
-
1/2 can diced tomatoes
-
1 C cooked elbow macaroni
-
salt, pepper, garlic to taste
Cook turkey until brown. Add remaining ingredients and simmer 15 minutes.
Mom always served hers with garlic toast, but I thought the meal itself was enough. It was nice to share a bit of my childhood with Ninja by making him one of the dishes I used to eat!

I love simple workouts like that! Definitely writing that one down. And holy cow, you make some of the prettiest pancakes I’ve ever seen! They look like IHOP-perfect pancakes, except with good for you ingredients!

Purty pancakes, for reals! And coconut flour is not easy to use without them eggs!! But I bet these taste wonderful. (I rarely succeed making coconut flour pancakes)
I have been obsessed with coconut flour lately!!! You should try mixing some into greek yogurt. It gets insanely thick and delicious. And I love that short workout. I’ve been all about quick and effective high intensity workouts lately, too. I don’t have much time so that’s the way they have to be!

My Grandma used to make something really similar to that Goulash, we always called it tomato macaroni. Soo good!
