Where in the world is Carmen San Diego…err Kat?
Sorry for bailing on you guys the last few days. My body has been having a mini revolt against me, so I’ve just been trying to rest up. You’d think that would mean plenty of computer time, but I’d much rather lay on my couch and watch football than stare at a computer screen. Sorry, but it’s the truth.
Anyway, I’m fully recharged and ready to go now! (I hope.)
Breakfast: Although the weather here is still in the 80’s (seriously, I’m so sick of shorts!) I opted to switch to oats a few times this week already. I can’t help it guys. It’s like my body wants fall, but the weather just won’t let up. Well, I guess I decided to give in to my body, because these oats have been hitting.the.spot.
These oats are beyond perfect. It must be the pumpkin. I’ve been eating them nonstop. So creamy and fall-y (making up words as I go here…)
Snack #1: Yogurt yogurt yogurt. Good heavens it’s seriously a sick obsession of mine right now. Thank you hot weather for THAT I guess! I actually found some Strawberry Cho on sale this week. Talk about a freakin’ steal too. I snatched that baby up and caressed it as I walked through the rest of the store.
Yes I am fully aware that strawberries are now out of season, but you know what? It’s 86 degrees today and that feels like summer to me so I bought some freakin’ berries.
Lunch: There’s just something about a cheesy egg burrito that brings me comfort. Probably because it’s my daddy’s favorite breakfast food. Well, other than turkey bacon and apple fritters of course.
You may or may not be seeing squash on my blog a lot in the upcoming months. I already went through two acorn squash this week. By myself. I’m going to turn into an Oompa Loompa.
Dinner: Whelp, I told you that you’d be seeing more squash didn’t I? I guess I should’ve warned you that I’ve been eating it non-stop. And because the weather is so freaking hot still I get to cook burgers without feeling weird. Nothing weirder than people who BBQ in the rain or snow. I’m just sayin’…that’s some intense BBQ lovin’ going on there.
Snack #2 – I don’t really know if this is considered a snack, especially since it provided no nutrition and I didn’t eat them to hold me over. I ate them simply because they were in my cupboard. That and I’m wondering if I eat enough candy corn maybe I can summon the fall gods to bestow some fall weather on LA. I think it’s a solid plan….a solid and tasty plan.
Favorite squash & way to cook it? I’m pretty fond of butternut – simply sliced, roasted, and dunked in ketchup.
