Happy WIAW friends!
It’s been a jam packed week for me thus far, so I’m sorry if I’ve been absent as of late. Things are just bananas in my house right now, and while I could do more night blogging, I’ve read that working on the computer in the dark is not good for your eyes. 😉 Kidding, but seriously after being on the computer all day long for work all I want to do is
throw turn the dang thing off come 4pm.
I promise I’ll get better with responding to comments and such as I start to manage and figure out this new workload of mine!
Two one mug of unpictured coffee also accompanied this delicious little breakfast of mine! I’ve been getting up with Ninja at 5:30AM [when he leaves for work] each morning so I’ve been needing something more substantial to hold me over for my gym/lifting sessions each day. I know rice cakes aren’t much, but the past few days I haven’t been waking up ravenous like I normally do, so these little suckers have been doing just fine at getting me through my workouts.
Of course afterwards I am beyond starving!
Cashew Chicken Salad – Mary’s crackers – Maple Orange Brussel Sprout Salad
Gimme all the food! Oh my goodness this plate hit.the.spot. So much deliciousness on one plate – I literally coundn’t decide what I wanted to eat first. Both of these salads [which aren’t really salads at all…] get better as they sit in the fridge. It really lets all the flavors marry and come together to make sweet, sweet foodie love.
Yep, trust me on this one guys. You’ve got to let your foods marry and make sweet flavor love.
I also completely forgot that I had a box of Mary’s crackers stashed away [it was so stashed I couldn’t even see them!], so I was super excited when I stumbled upon them when I was sorting out my pantry the other day.
Lesson of the day: Keep your pantry clean so you know what foodie goodness you have stashed away!
New recipe alert! I wish I could describe to you just how much I love these muffins, but words really can’t do them justice. I can’t wait to share them with you guys but until then, just look at that delicious bloob color!
And of course cuties on the side, because I’m obsessed and will continue to eat them until they no longer grace my store’s produce shelves. Which…does that even happen? If so, I’m going to need to prepare myself for the months without them…
Yet another new recipe! As I mentioned last week, the weather has really taken a dive here into the low 40s, with wind, rain and all around yuckiness. That kind of weather leaves me craving two things: coffee and soup. So while I have [of course] been sipping coffee all day long, I needed to create a tasty soup to warm me from the inside out. This italian sausage soup is so incredibly flavorful, I literally could just sip on the broth as a meal.
Except you and I know that broth is so not enough calories to tame the beast that is my appetite, so I won’t be drinking any broth soups as a meal any time soon. The point here is that I could if I really wanted to, because danggg this broth is amazeballs.
I completely forgot how much I adored this combination. I’m finding lately that I’ve been craving the combination of chocolate and fruit at night, so I made myself a big batch of raw chocolate cups and have been munching on them with apples, cuties, pears, and bananas when that night time craving hits.
Although Ninja’s ice cream has started calling to me at night too. Freaking dairy…
