Happy WIAW friends!
I hope that ya’ll have had a good start to your week. I have been crazy busy [seems like a weekly trend now!] so I’m playing catch up once again this week. I’ve got some pretty exciting things coming up though, so I’m just trying to keep my focus on that and my nose to the grind.
Let’s get to some food, shall we? 🙂
Since Tuesdays are my typical leg days, I always eat a bit more bulk [ie. carbs] for my pre-workout breakfast. No one likes a rumbly belly and I especially don’t want to faint mid-squat with 200lbs on my back from lack of nutrition. I know that might seem a bit of an exaggeration, but I work my legs to death on leg day, so I really do need some extra oomph to get me through!
I also have been waking up earlier than normal [5:30 instead of 6] and I find that I’m much hungrier. Apparently a half hour makes a huge difference!

Give me all the food! I actually was a tad bit later getting home from the gym yesterday thanks to a few errands I had to run, so this post-workout meal was more of a lunch! I try not to go over the 45 minute mark post-workout without feeding my muscles, but yesterday I got to roughly 30 minutes post-workout without food and just about ate my arm!
I quickly whipped this meal up as soon as I walked through the door [no seriously, I didn’t even take my backpack off before heating up my skillet] and inhaled it in quite an unattractive fashion. Poor Opie didn’t even have any crumbs to snatch up.
After eating I jumped in the shower to wash the stank off, then proceeded to get to work with my freelance projects. Three hours of food photography later, I was ready to grab a quick snack! Since these babies were done with their photoshoot, I noshed on a muffin while also sucking down a mug of tea. The rain might be gone and the sun might be shining, but it’s still just a tad bit cold here!
Since I had such a late [and big!] post-workout meal plus my muffin a few hours later, I really wasn’t hungry for a big lunch. Instead I quenched a craving that I’ve been having for quite some time!
This granola recipe will make its debut soon [it’s so delicious!] and is the perfect pairing with raspberry jam and greek yogurt. I wasn’t all the way satisfied with this bowl upon first look, so I sprinkled some GF grahams on top and BOOM! perfection.
Look at that hunk of meat! I go back and forth with my feelings on meat [some days I love it, others not so much], but yesterday all I wanted was a big ol’ slab of bbq! Though we haven’t pulled out the real BBQ yet, I baked this chicken up in the oven wrapped in foil to allow for the sauce to really set in as well as for the chicken to remain juicy. It wasn’t quite as good as cooking it on the grill, but it worked!
The shoestring taters are a result of my newest favorite kitchen gadget, which will be featured in an upcoming post because I am simply obsessed.
And because no day is complete without chocolate I polished off the remainder of my fruit & nut chocolate cups. It’s amazing how something as simple as dried fruit, nuts, & chocolate can curb a massive sweet tooth unlike any processed candy bar. Processed chocolate just doesn’t cut it for me, but that could be because most processed chocolate is milk chocolate and lacks that rich, dark chocolate flavor.
Which is probably why I prefer to make my own chocolate. Unless we are talking about chocolate chips – I wouldn’t even know where to begin on how to make those things!
