Whole Wheat Chocolate Muffins

Happy Monday!! Thank you to everyone you commented on my last post. It was nice to learn what your exercise motivators are, and how your views on it has changed over the years.

Breakfast yesterday was a big bowl of Barabara’s wheat flakes with some berries and naners


I could eat cereal all day everyday. LOVE cereal!

After church I was pretty much beyond starving, so I grabbed a bunch of leftovers and threw them all together

I demolished this bowl, but was still seriously shaky. That’s what I get for not packing a snack! I grabbed a rice cake about an hour later.

Ninja and I had a date night last night with some friends, where we went to one of our favorite restaurants. I got my usual


2 veggie tacos with salsa for dipping along side some carrots and broccoli

I could eat these tacos everyday for the rest of my life. So delicious and packed with flavor!

This weekend I also got my apron on and got to baking for my co-worker (AGAIN).  I also wanted to come up with a nice chocolate muffin recipe for Ninja, since those are his favorite, so I decided to kill two birds with one stone!

Whole Wheat Dark Chocolate Jumbo Muffins
A heart chocolate muffin, with just the right amount of sweetness.  Add chocolate chips for an even bigger treat!


  • 1 1/2 C whole wheat pastry flour
  • 3/4 C stevia for baking blend
  • 1/4 C dark cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 C fat free plain yogurt
  • 2/3 C almond milk
  • 1/2 tsp vanilla
  • 1/2 C chocolate chips (optional)

Pre heat oven to 400 degrees. Mix first 6 ingredients, then add in remaining. Pour into a greased jumbo muffin tin and bake 15- 20 minutes. Can also be made into regular sized muffins.




AMAZING. I honestly didn’t think Ninja would be a fan since they were whole wheat, but he took one bite and said “these are GOOD!” He then proceeded to devour then one in his hand while reaching for another.  I’d say I succeeded!

Do you prefer a jumbo muffin or a regular sized one? I think the regular ones are teasers, I always want more!

    Oh how I love your recipes, these sound SUPER delish! 😀 And girl I’m so with you on cereal, I think I could eat it for every meal and be a happy camper heehee

    I make the regular-sized muffins…but only because I KNOW I’ll eat at least two or three, regardless of size, and three regular muffins is slightly more reasonable than three jumbo muffins 😀 And I love that cereal–had to stop buying it ’cause I’d just munch on a whole box over the course of a day. Cereal is toooo addictive.

    Looks AWESOME! It reminds me of something I make similar with oat flour…haven’t made them forever though! Need to try yours…you are such a great baker!!!
