Weekends Best – Protein Pancakes

Happy Monday! Hope you all had a fabulous weekend. I had a pretty relaxing weekend filled with simple workouts, great eats, and pretty dresses. Let’s recap!

proteinpancakes Protein Pancakes 
A simple pancake recipe that is packed with protein! These pancakes will fill your tummy for hours!

Ingredients:

  • 2 egg whites
  • 1/4 C applesauce
  • 1/4 C cottage cheese
  • 1/2 scoop vanilla protein powder
  • pinch baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • few drops stevia

Blend everything together and cook! Mine are topped with a syrup of metled coconut oil and honey.

Best DrinkIMG_3310 orange, apple, 2 celery stalks, and 1 small knob of ginger

I really miss my fresh juices! It’s just been way to cold to enjoy them though. I literally sucked this one down while standing in front of the heater. I was so cold, but this was just what I needed to get me going on a lazy Sunday afternoon!

Best Momentdress4

I got my Maid of Honor dress for Bestie’s wedding in April!  And it’s actually neither of the two in these pictures. HA! It looks just like the red one though, except that the material is chiffon instead of satin. It’s pretty and comfy, so now I just have to whip these biceps into shape! Got to show that I have the right to bear arms. (I crack myself up sometimes!)

Best Workout

After my mini breakdown last week, I’ve really been doing my best to take care of myself. My body feels 100% better after just a few days of taking it easy. Don’t worry though, I’m not going to just right back in like an animal! I’ve lightened my weight load, so I’m lifting a little less now, and I also went out and got new shoes to take care of my knees and back when I hit the pavement. And of course I can’t forget the TLC! I’ve been foam rolling and stretching, and even took a day COMPLETELY off from working out. No yoga or anything. Just rest! It felt great.

Saturday I did hit the treadmill for a small run. My 1st soccer game is next Sunday, so I’m just trying to keep my lungs and legs ready!

Treadmill Mixed Run

  • 5 minutes warm up walk
  • 2 minute jog
  • 1 min walk lunge (put the treadmill to 1.0)
  • 1 minute sprint

Repeat 8-10 times.

This workout was perfect for me. The lunges had my legs crying at the end, but my body never felt like I was pushing it too hard. I felt comfortable and was only slightly out of breath at the end. NO MORE INJURIES HERE! I finished off with lots of stretching and foam rolling.
