Man I was so not a happy camper when my alarm went off this morning, but it’s Monday whether I like it or not, so I better just roll with it right?! We had a party every night this weekend, so I guess my body is a bit exhausted from all the foods and excitement! I’m really looking forward to a relaxing day of work. NOT.

Whole wheat toast with PB + Amanda’s homemade applesauce
Warm melty peanut butter along with some warm cinnamon applesauce? Yep, I’m addicted. I literally ate 2 big mugs of this applesauce warmed up each morning. Who needs oats to warm your belly when you have applesauce?!

I bought 3 of the peanut butters and 2 jugs of the coconut water. And I already finished one of the peanut butters. But I did use it to bake too, so don’t judge me.
Weekends Best Moment in the Kitchen
I was in the kitchen for 3 hours just finishing up these cookies. The dough alone takes like 10 minutes to make, but then you have to chill the dough, roll, cut out and bake,
and that process is repeated a million times it feels like! Then of course I decorated them, which took an hour itself. But according to everyone who inhaled them, they were totally worth it.
Cinnamon Sugar Almonds
This recipe is so simple and delicious, you’ll never buy sugared nuts again
Ingredients:
- 1 Cup white sugar
- 3 Cups roasted unsalted almonds
- 1 T cinnamon
- 1/4 Cup water
- pinch salt
Combine everything in a large pan. Heat on medium heat until sugar crystallizes. Let cool on parchment paper and enjoy!![]()
I packaged these little babies up and threw them into some gift baskets I’m making for my co-workers this year. I also may or may not have sampled a few handfuls.

Yum! My weekend’s best was this butternut squash penne bake I made and the leftovers last night. So good!! I had three holiday parties so far and this week I have four more plus actually Christmas Eve, Christmas and our annual friends exchange on Christmas night!
I definitely wasn’t a happy camper this morning either -.- I didn’t end up getting home until 2 AM last night and holy.wow am I feeling the tolls of travelling this morning. Airports, suitcases, and taxis? Bah! I’ve definitely had my fill for a while. And coming home to a lack of homemade applesauce? Sad face!
Ah looks like a great weekend indeed! Love your breakfast- sometimes the simplest ones are the most delicious! The best meal of my weekend: truffle sliders followed by red velvet cake!
