Happy Monday! I wasted my weekend on the couch feeling slightly under the weather, but that’s ok. I’m ready to power through this week to get to my girl’s day on Saturday with Bestie! We’ve got quite the delicious day planned, emphasis on the delicious part!! Just wait until I show you what we have planned.
I bought 2 headbands from Headbands Of Hope this weekend to support the cancer research for kids. I got the purple and the blue one to give to Little Sissy. I thought she’d look cute rocking it in her dance classes. This company donates a headband with every purchase to a little girl with cancer, which is really awesome. It doesn’t get any better than that in my opinion.
Weekend’s Best St. Patty’s Day Representation
I got all sorts of crazy with the green on St. Patty’s Day this year. My workout gear, nails, and even Sunday morning breakfast were all pretty green and festive!
Don’t worry, I cleaned the mirror immediately after snapping this picture. Why is it that you can never see dust until you take a picture? I swear I’m not some lazy bum who never cleans. And those pancakes? I will never get sick of them. I think I calculated the stats once and they came out to like 300-400 calories and a whole bunch of protein. They seriously keep me full and satisfied for HOURS, just how I like it!
Weekend’s Best Eat The Rainbow Moment
Put together this little platter for my mom’s St. Patty’s Day poker party. The middle is a greek yogurt/ranch seasoning dip. Isn’t it gorgeous?! Of course I didn’t get to eat any of it. My mom has me make her dishes every month for these poker parties she goes to, so this was all for some strangers I’ve never met. Doing my best to pass on good health to others!
Weekend’s Best Snack

Ok, so I know this looks more like a meal, but it was actually a snack. Hey I don’t mess around when it comes to cereal people. Truthfully, it was one of those awkward in between meals where it was like 11 o’clock and I was super hungry but didn’t want to make a lunch, so this was it. Of course I ended up making a real lunch at about 2pm. Whatever, it was delicious, and it made my belly happy.
Weekend’s Best Moment
Well, that would have to be reading all the wonderful, beautiful comments on my last post. You guys sure do know how to make a girl cry. This whole new change of perspective really has taken me for quite the whirl wind, and I kind of don’t know what to do with myself now. In a good way, of course. This quote really kind of topped off the weekend.
It’s sort of funny too, considering that one of my favorite things in the world are butterflies. Kind of perfect right?

Weekend’s Best Baking – I made CCK’s mint fudge pie without the crust and it was SO good. I like experimenting with tofu and it was well worth it! Plus, my family didn’t even notice there was tofu added to it! I read your post yesterday and it’s inspiring to read about people who fully learn to love their bodies because there’s hope for the rest of us!
Try not to be too disappointed with me after I admit that I didn’t do much St. Patty’s day celebrating at all
I was planning on baking up a loaf of Irish soda bread, but that kind of got put on the backburner when mom and dad came over to watch the videos we shot while on vacation. Looking at all the sunshine and good times we had is seriously making me miss it! I think it’s time to start planning another vacation

I’m so bad with that kind of stuff. And a bowl of cereal sounds really yummy right about now~And that really IS a sweet quote, and so true when it comes to embracing ourselves sometimes.
That quote is awesome! I have totally noticed that 300-400 calorie breakfasts are the way to go! I eat breakfast at 6:30 and don’t have my lunch until 11 — big breakfasts rock!
Woo hoo! Sport that green, missy! I wore teal yesterday…does that count? And I tried to give myself a little Irish manicure, but I friggin smudged the crap out of it less than an hour later! Boo!
I could seriously dive face-first into that plate of pancakes right now! …mind you, I just had dinner about an hour ago! Lol! And way to represent for all us cereal killers out there! I totally polished off not one, but TWO bowls the other night…ha! That’s what I get for staying up late and reading food blogs!

I completely forgot it was St. Patty’s day! I was at least going to make some cabbage, but then it slipped my mind. Man, I know I’m old when I start forgetting holidays, I used to count down to every single one of those things! Love that you’re spreading the health and the headbands–I still use the one I won from you all the time! And it gets all sorts of compliments from my fellow glittery-things-lovers
