Happy Monday!! January is almost already over…say whaat?! This is craziness people. I feel like I’ve just been moving in slow motion as time speeds pass. Slow down time!! I’m turning 24 soon, my little brother will be 14 and my little sissy will be 9. I’m not ok with them getting so big, so time needs to slow down. NOW!
Coconut Banana Pancakes
These beauties are courtesy of Kiss My Broccoli. And let me just say, these are by far the best pancakes I’ve ever made. The flavor, the taste, the texture. I topped them with some homemade bloob jam made by simply heating up some bloobs with a bit of water and flaxseed. These babies held me over for HOURS!

I picked up this frother for $2.99 from IKEA, and no, it was not on sale. I have been frothing like a mad woman all weekend now. Who needs Starbucks when you can make your own lattes and teas at home?!
All I’ve been doing is throwing about 3-4T of almond milk in a cup with some stevia and froth it for 30 seconds. Once it’s foamy, I brew up some coffee using my Keurig, and top the foam with cinnamon. PERFECTION. I’ve also been doing it for my teas!

This beast was my post game lunch. I was seriously so hungry when I got home, that I just dumped everything on to a plate and didn’t even realize how big it was until I was half way through it! I was completely stuffed by the end, but it was so good!
