Weekends Best

Oh Monday, I am so not a fan of you. I had a pretty great weekend, but I suppose everything good has to come to an end right?! Let’s recap the weekend!

I’ve been having this combination for breakfast for the past 4 days now. I can’t get enough of it! Except for now I am out of english muffins, and that makes me very sad.

IMG_2888 It rained. A LOT. And apparently Opie doesn’t know how to hide under the huge awning we have in the back yard, because when I got home, she looked like this. What a mess.

Friday night I was seriously craving biscuits and gravy. When I was younger, every time I visited my daddy, my mom #2 would make me biscuits and gravy with scrambled eggs one of the mornings. She makes the BEST drop biscuits. I guess I was craving comfort Friday night, because I really needed my biscuits and gravy! Apparently however, everyone makes their gravy with sausage, which I do NOT like, so I decided to make my own version, just without the sausage!

Sausage-Less Gravy
Thick, creamy and delicious, just like the kind my mom makes!


  • 2 T flour
  • 2 T butter
  • 2 C milk
  • 1 tsp poultry seasoning or herbed chicken
  • salt and pepper to taste

Melt butter in a pan. Sprinkle in flour and whisk to form a paste. Let cook 1 minute. Pour in milk and whisk constantly. Add seasonings, still whisking away. Bring to a boil while whisking and continue to cook until thickened. Will thicken up even more once removed from heat.

Talk about delicious. I crumbled up 3 biscuits along with 2 scrambled eggs and dumped on my gravy. IT WAS PERFECT. It hit the comfort craving spot, and all the right taste buds. Even better? I didn’t even once think about the fact that there were no veggies or fruit on my plate. I just munched away happily. Talk about comfort!
