Is the weekend really over already? Gosh darn…But I guess that’s what happens when you’re having fun! Ninja was gone this weekend at a church camp, so Bestie offered to stay with me for a much needed girl’s weekend. And boy did we have a good time! Let’s recap.
We enjoyed comfort food.
baked potato loaded with black beans, cheese, broccoli, salsa and guac – PB&J on wheat bread with bloobs
cheese, black bean, and veggie enchiladas alongside organic corn
Bestie and I have similar taste palates, so cooking for her is a cinch. We kept it low key and simple, but it was still delicious and nutritious as well. Along with the normal goodies, I made some muffins for us to enjoy for breakfast.
Orange Cranberry Muffins
Tangy yet sweet, these muffins are wholesome and delicious for breakfast or a snack!
Ingredients:
- 2 C whole wheat pastry flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp sea salt
- 1/2 C white sugar
- 3 T orange zest
- 1 C fresh orange juice
- 1/2 C applesauce
- 2 flax eggs
- 1 C frozen cranberries, chopped
Preheat oven to 350. Mix fry ingredients. In another bowl mix up wet ingredients. Add wet to dry and stir well. Stir in cranberries. Pour into 12 muffin tins and bake 20-25 minutes.
We snacked on these muffins along with mugs of coffee for our pre-workout breakfast. They were filling enough to get us through our workout (2 mile run + circuit work), yet light enough to keep us from getting sick to our stomachs!
Apparently we were in a dancing mood, because that’s all we watched! These movies are nothing epic, but they were light hearted and had some great music. They were just the kind of movies we were in the mood for!
Well, trimmed actually, but since my hair was so dead at the ends, the lady had to chop an inch + off to get it healthy again. But I didn’t mind at all. Helllooo new layers!
We picked up some new workout clothes
(please excuse the dirty mirror)
We were both seriously lacking in the warm clothes department and since it has gotten so cold here in the AM and PM, we both decided to pick up a few things to keep us warm during our workouts. I picked up a pair of pants for $20 and the jacket was on sale for $15. Gotta love Marshalls! Also, these pictures do NOT do the jacket justice, it’s seriously NEON pink!
We also got massages, but I didn’t bring my camera in there for that one! It was a really good girls weekend, one I think that we both needed. That being said, I’m glad to have Ninja home. I just feel incomplete when he’s away!

I’m a big fan of any girly movies involving weddings or babies. Like Father of the Bride I and II or Bridal Wars. Good stuff.
That seriously sounds like an awesome weekend, and I remember you mentioning that you had some cranberries to use up, so I’m assuming the muffins are a result of that? Either way, they sound delicious! I loooove the idea of using juice in baking. I think I added a cup of OJ to a chocolate cake I made once, and that combo seriously rocked my socks. And I agreee that the AM and PM are chilly~but the afternoon has been way too summerish, which I find to be really strange.
