Do you guys remember my citrus obsession?
Well guys, that citrus obsession is back in full force, but this time it is being paired with the sweet, juicy flavor that is watermelon. Ohhhh yes.
This recipe was born out of my sheer need to avoid anything heat-related.
With the temps still in the high 90s this week after last weeks 106 degree heat wave, I’ve been searching for new ways to stay refreshed, hydrated, and cool. I do not do well in the heat guys, like at all, so I’ve been sucking down water and avoiding almost any sort of cooking, which is probably not fun for Ninja but I do what I’ve gotta do to survive this heat.
And what’s more hydrating and refreshing than watermelon?
I know this is my third chia pudding that I’ve posted this year, butI’m really becoming obsessed with those freaky little seeds. When we really break down the nutrition and look at them, they are nutritional powerhouses that just really need to be in everyone’s diet. Plus, they make some fabulous puddings!
And due to the yummy watermelon, this watermelon lime chia pudding is sweet.
So much so that I didn’t even need to add any sweetener to this pudding. I would almost deem this pudding too sweet, but the lime juice conteracts and pairs with the sweetness so well that it just works. Plus it’s uber refreshing.
Did I mention that it’s refreshing? 😉 Cause it really is.
This watermelon lime chia pudding is a perfect BBQ match. I might even whip some up for Ninja and I’s first camping trip this summer at the river – cause the hot sun paired with the cool river and some refreshing watermelon pretty much screams camping to me.
Whipped up in 5 minutes and thickened overnight, this watermelon lime chia pudding is a fantastic, hydrating snack that is perfectly sweet! Make it today for your own snack time or bring it along to your next BBQ – it’s a hit either way!

- 1 cup watermelon
- 1/4 cup chia seeds
- 2-3 tablespoons fresh lime juice
- 1/2 lime, zested
- fresh watermelon, chunked
- Place the watermelon into a blender and blend until smooth. Pour watermelon into container or bowl.
- Stir in the chia seeds, lime juice and lime zest. Cover.
- Set pudding in the fridge overnight to set up.
- When ready to eat, top with fresh watermelon and more lime zest.
