Happy WIAW!! Hope you all are staying cool! I am having serious issues with the heat out here in LA. Me and heat do NOT mix well!
As I said above, I am not a fan of being hot, sweaty and gross (unless I’m working out!) Breakfasts have been on the cool side
multigrain cheerios + bloobs and almond milk
Smoothie for snack time
1/2 C kefir, kale, 1 naner, handful strawberries, 1T flaxseeds, stevia and ice
Lunch time has involves big salads and little cooking
romaine topped with black beans, ground turkey, tomatoes, guacamole and 1 broken taco shell
It has been miserably hot here in LA, and yet for some reason, I can’t get the baking craving out of my system! It hit me again hard yesterday, so I grabbed all the fans in the house and pointed them towards the kitchen, then got to work!
Vegan Peanut Butter Coconut Bars
The subtle coconut flavor matches perfectly with the bananas and peanut butter in these bars!
Ingredients:

1 flax egg
-
1/3 C brown sugar
-
2 tsp vanilla extract
-
2 ripe bananas, mashed
-
1 C whole wheat pastry flour
-
1 tsp baking powder
-
1/4 tsp salt
-
3 T coconut oil, melted
-
1/3 C coconut peanut butter
Preheat oven to 350. Mix together flax egg and sugar. Add in remaining ingredients EXCEPT peanut butter. Remove 1/2C batter. Add pb to the 1/2C mix. Pour plain batter into an 8×8 dish. Drop pb mixture on top and swirl in. Bake 20 minutes.

I made the mistake of trying to pull them out of the pan a bit early, of course causing them to crumble. And since I didn’t want to waster any, I ended up eating all of the crumbled pieces. I wish I could say I got my sweet fix, but all these did was make me want more. The combination of flavors is so amazing.
Ninja took us out for dinner since it was insanely hot in our house and neither of us wanted to be there. We hit up Subway for the usual
6in turkey on wheat with spinach, onions, bell peppers, olives and avocado
I hate how sheisty they are on the veggies. 4 strips of bell pepper? Come on people, I’m buying $5 for this!
What is your favorite combination of flavors to use when baking? I love peanut butter and chocolate of course, but lemon and bloobs are pretty good too!







Oh my gosh those bars look good–and I think I’d take them out early on purpose just for crumblies
I love the crumbly/broken/undercooked bits of any baking project. Not as pretty, but I’m convinced they taste better.
DELICIOUS!!! I bet the flavor of coconut peanut butter with banana is out of this world!
I need to try Kefir, I keep seeing it but have never tried it.

You have the best Vegan recipes ever! I’m not close to being vegan but I still want to try everything! PB and coconut is an interesting combination that I must try! I love them both separately so why not combine them?!

I agree that peanut butter and chocolate is a great combination. But I also love pumpkin with pretty much anything! Pumpkin and chocolate is always incredible!
your breakfast is my favorite summer meal. Cheerios and blueberries! Yum!

Ohh & girl, I’ve realized when getting veggies @ subway you gotta tell me them how many you want of everything. Yes I am that girl that says: 4 tomatoes, 5 cucumbers, handful of green pepper ((ohh no more please)), etc… They may look @ you like you have a veggie problem, but hey @least your satisified

PB and chocolate HAS to be my favorite combo while baking, ESPECIALLY if the result is on the crunchy side. Think Crunch bar with peanut butter included. Although now that I think of it, a Crunch bar isn’t a baked good… haha
And girl, I feel ya on the heat! I can’t even stand outside for a few moments without sweating!
that’s a toughie! I have several favorite combos! I like chocolate and orange! But it can be tricky so I don’t make that too often~And also, I really like coconut and pb, and coffee/espresso+nutty.
