Happy Monday! First and foremost, thank you guys for your comments regarding my ER visit. I have been doing much better over the weekend, and while still not 100%, I think I am getting a grasp on this thing. I go tomorrow for a test, and then have another one on Thursday. So I am hoping to have some results soon!
Weekend Recap
Even though I was sitting on my couch for most of it, there were some cool moments this weekend!
Friday night Bestie and I went to Daphnes, a greek restaurant that I ADORE. We both got a roasted veggie pita and split some pita crackers with hummus.
Ninja actually had Saturday off (the 1st one in forever) so I made us a nice pancake breakfast
ww banana pancakes topped with a maple syrup/coconut oil syrup and ww chocolate chip pancakes that Ninja doused in maple
On Saturday night, I got to baking. Every few months at my church we have cupcakes on that patio in between services to celebrate the birthdays that occur within that time frame. I volunteered this month to make a dozen, so Saturday night was spent baking away.
Vegan Chocolate Cupcakes with Peanut Butter Frosting
A light but perfectly moist cake, topped with a rich peanut butter frosting.
Cake Ingredients:
- 1 C almond milk
- 1 tsp apple cider vinegar
- 3/4 C sugar
- 1/3 C coconut oil
- 1 1/2 tsp vanilla
- 1 C unbleached all purpose flour
- 1/3 C cocoa powder
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp sea salt
Frosting Ingredients:
- 1/3 C peanut butter
- 3 C powdered sugar
- 1 tsp vanilla
- almond milk
Frosting: Beat peanut butter, sugar and vanilla together. Add milk until you reach desired consistency for the frosting.
Cupcakes: Pre heat oven to 350. Whisk together milk and vinegar and let sit for 5 minutes. Add sugar, oil and vanilla and whip until frothy. In another bowl mix remaining ingredients. Add to wet mixture slowly, mixing until no large lumps remain. Poour into 12 muffin liners and bake 18-20 minutes.
So. Dang. Yummy.
The best part about these? I brought them to the church, people ate them, and didn’t even know they were vegan. I’m so sneaky.

It’s such a good and “evil” feeling, isn’t it? (in the best way of course) Great job with these Kat! And I’m so glad you’re feeling a better, I was starting to get concerned. And i literaly laughed when you mentioned that Ninja doused the pancakes in maple because that’s exxxactly what Greg does with his french toasts, pancakes, etc. He just HAS to have everything crazy sweet.
I love sneaking vegan treats in, especially since no one will try/believe they can be good if they know ahead of time.

These look delicious, and so pretty! I always sneak healthy ingredients into my banana bread, and nobody knows the difference.

Hey girl! I am glad you are feeling better! I can’t believe I missed this post on this and was like huhhhh when you mentioned it on twitter to me. I hope everything comes back OK. These cupcakes look awesome!! This is a great idea for a bbq I have to go to after work tomorrow at a co workers house.. YUM!!! and by the way, I am constantly asking bloggers what program they use for the pic frames… do you mind me asking what you use? I have a few on my mac but none come out this good!
