It’s Friday, right?
Please tell me it’s Friday [checks calendar, releases deep sigh]. I don’t know about you guys but this week was killer. I know I get up at 4am everyday but for some reason I was struggling to keep my eyes open past 8pm. How sad is that? Poor Little Sissy is staying over tonight for some fun sister shenanigans and I’ve got a feeling that I’m going to be bailing on her by 9pm. What 13 year old wants to go to bed at 9pm on a Friday night? Not her, that’s for sure. That kid is a total night owl. I, on the other hand, plan to be unconscious and dreaming by 9:30pm tonight.
And I have no idea why I told you all of that. See? My brain is totally fried.
Basically the point I’m getting to is that I’m super thankful today is Friday.
Now let’s move on to food, shall we?
Well the first month of 2018 has nearly come to an end [seriously – already?!] and I’m already sharing my second Bite recipe for the month. Ummm, oops? I clearly have a snacking problem if my recipes are any indication of my diet. At least they are healthy, right? 😉
Though I’ve got to say that I’m in complete awe with how much attention my first Bite recipe is doing. Those Cranberry Lemon Bites are getting pinned like crazy lately, which is super cool because those things are really tasty. And by the way guys, I love hearing about how you feel in regards to my recipes after you’ve tried them, so please make sure you let me know – even if you hate it! I love contructive criticism 🙂
Something else that I clearly am having a bit of an obsession with lately is….QUINOA! That’s right friends, there is quinoa hidden away in these Trail Mix Energy Bites. Aaaaaand I’m pretty sure I just heard the collective groan from my entire family.

Let’s talk trail mix real quick.
Trail mix is one of those things that I don’t buy. I can’t buy it, simply because I have no self-control and I can easily eat 1,000 calories worth of trail mix before I even realize it. And I’m really not picky when it comes to trail mix – it can be all nut based, mostly dried fruit based or loaded with chocolate. I will seriously take any and all trail mix – I just love that sweet and salty combination!
Which is probably why these Trail Mix Energy Bites are amongst my favorite that I’ve ever made. They aren’t only packed with a sweet and salty trail mix of cranberries, pumpkin seeds, almonds and chocolate chips but also cooked quinoa, which I’ve been sort of obsessed with stuffing into everything that I eat. I’m calling it “sneak nutrition” – think it’ll catch on? 😉
But seriously, these Trail Mix Energy Bites are so simple to make and yet they contain everything you need to provide you with long-lasting energy and a much needed brain boost when that mid-day slump hits. You know the one I’m talking about right? I can’t possibly be the only one who struggles with it!
And like all trail mix, feel free to use whatever “trail mix” ingredients you want to customize these bites to your own personal tastes. I rolled with dried cranberries, almonds, pumpkin seeds and chocolate chips because they are amongst my favorites but nearly anything will work. Play around with it and have some fun – then let me know which add-ins you chose 🙂
- 1 cup gluten-free rolled oats
- ¼ cup cooked quinoa
- ¼ cup ground flaxseed
- 1 teaspoon cinnamon
- ¾ cup peanut butter
- ¼ cup maple syrup (or honey if not vegan)
- ¼ cup dried cranberries, chopped
- ¼ cup pepitas, chopped
- ¼ cup almonds, chopped
- ¼ cup mini chocolate chips, dairy-free
- Add rolled oats, quinoa, flaxseed, cinnamon, peanut butter and maple syrup to a food processor. Pulse until oats have broken down and mixture starts to form.
- Add remaining ingredients and pulse until just incorporated.
- Roll batter into 15-20 bites. Store in the fridge until ready to eat.
