Happy thinking out loud Thursday!
I’ve got lots of random goodness to share today, so let’s get right to it alright? Time for some random shenanigans!
1 Starting with the weekend – Ninja and I went on a day trip to visit his grandma up in the Bay Area. For those of you who don’t realize it yet, yours truly hates the city. It’s one of the reasons why I was so excited to leave LA. I know some of you are shaking your head and cringing right now, but y’all can go ahead and take my spot in the city. I prefer fresh air, open fields and the smell of cow manure.
That being said, there are some upsides to the city – like finally getting my hands on a gluten-free bakery!
I was actually inside of a bookstore looking around when my father-in-law rushed over to me to tell me about the bakery around the corner. At first I didn’t believe him – until he showed me the above picture!
Y’all should’ve seen how embarrassing I looked jumping up and down inside the bookstore like a 5 year old. It’s moments like those that I really think I could make one heck of a reality TV show.
Next came the hard part – what on earth to get?!
I was actually a bit disappointed by the selection. There was about 4 different cookies, 2 quiches and 4 cupcake flavors to choose from. I was hoping for some bagels so that I could channel my inner Cora but alas, no such luck. Instead I picked the obvious choice.

That is honestly all I was planning to get until Ninja gave me the thumbs up to buy more. Here’s pretty much how the convo went:
Ninja: Kate, get more.
Me: No, it’s ok. A cupcake is all I need.
Ninja: We just drove 2 1/2 hours to find you a gluten-free bakery. Get some cookies.
Me: Ok….maybe just one.
Ninja to the worker: She’ll take one of each of those.
I love my husband.

And in case you were wondering, I did in fact eat my cupcake and two cookies all on the same day. It was hot and I was worried the chocolate would melt. HA! I can’t even pretend – I just wanted to eat them all, so I did.
2 Sunday my parents put together a little “signing” party for Little Bro. He got offers from two different colleges to play football and after visiting both campuses he finally picked his school of choice.
Little Bro is going to Hastings College!
Brother’s goal was to be able to get a scholarship to play football and he achieved that goal for himself this year. I’m so incredibly proud of him – he now is on scholarship for all 4 years at Hastings to play football.
Let’s not dive into how I’m dealing with him moving all the way across the country though, ok?
3 Little Bro isn’t the only one who achieved a goal this week. After taking months and months off of heavy lifting, I am finally back to the 200lb club in deadlifts!
Unlike last week when I unconsciously lifted 195lbs, this week I intentionally went for the 200lb mark. My gym doesn’t have 5lb plates in the room I deadlift though so instead of loading up the bar with 200lb even I just slapped two 10lb plates on each side and went for 205lbs.
Due to being beltless I went with only 3 sets of 2 reps, however it felt really, really good. This was also after squats, so I was a bit nervous about overdoing it when it came to my back but I didn’t feel any twinges at all!
Exciting stuff, guys. Though I am totally feeling it today in the booty. Holy smokes.
4 I realized this week that I haven’t made a new Bite recipe in a while, so I’ve been in the kitchen tinkering around with something I think is pretty incredible.
I’m planning on remaking these babies for their photo shoot today and if all goes well, these beauties should be on the blog soon! Then again, I do have some other really tasty things lined up as well…
5 Sometimes I don’t think before I create. I just do – then deal with the ramifications afterwards.
Case in point – I now have a full cheesecake in my fridge.
Guys this recipe – I can’t even describe how much I’m in love with it. Let’s just say that it’s no-bake, gluten-free and vegan as well as ridiculously tasty. It’ll make it’s debut soon – just in time for Easter!
6 Speaking of tasty, if you guys haven’t checked out the recipe for these PB&J Banana Bars you really need to.
I had to freeze the rest of the batch to keep me from nibbling on them every time I opened the fridge. Seriously, me & will power aren’t very well acquainted apparently….
