Happy thinking out loud Thursday!
Guys – Bestie is finally here! Which means if you find me to be a bit absent this week, you can go right ahead and blame her and her Nugget 😉 We don’t have anything really exciting planned – mostly just drinking coffee, girl talk and quality Nugget/Auntie time! Pretty much the perfect few days if you ask me.
That being said I did plan ahead and prep this random shenanigans post, so let’s get to it!
1 Speaking of perfect, how gorgeous is the tree in my backyard right now?! I could stare at it all day.
Every orchard in the area is in bloom as well. This time of year is pretty much my favorite. The rain’s are almost completely gone but the crisp air remains and the flowers are just starting to bloom. It’s dang gorgeous in my neck of the woods right now!
2 Speaking of the seasons changing, I’ve started making more and more smoothie bowls during the week. The season for all things smoothie bowls is almost among us, friends! Though I am excited about all the summer fruits [gimme those berries!!] I’m not too excited about the heat that comes with it…

3 Side note, can we all just pause and appreciate these wood bowls that I picked up for $.25 each from a thrift store recently? These are the almost exact same bowls that Daddy would bring with us when we went camping when I was younger so as soon as I saw them I knew that I had to have a few! Talk about bringing back some good memories…

4 I’ve been making it a priority of mine to spend some time in my Bible and with my journal more each week. I’m still not doing it as much as I’d like – but something is better than nothing!
Oh and we should probably not talk about how many journals I have. It’s sort of embarrassing…
5 If you follow me on Instagram, you might have noticed an increase in the amount of at home workouts that I’ve been doing lately. I’m not sure why but the simple, basic workouts are what have been appealing to me more lately. Don’t get me wrong – I still love going to the gym Monday through Friday, however once the weekend hits I just get this urge to get in my garage and play around with my equipment! So much so that I’ve even ditched my daily HIIT class a time or two in favor of something at home.
Notice the sweat marks? Those are from burpees….
Working out in my home gym also keeps me from going to heavy on the weight, which means less impact/damage to my back. It of course doesn’t mean my workouts are any less intense! I sweat buckets when I workout at home – probably because I lose track of time when I’m in there!
True story – I was once on my spin bike for TWO HOURS before I even realized it. Oops.
6. I finally jumped on board the sweet potato toast train! I kept it pretty simple for my first dive into the trend but I already have plans to up my toast game in the near future.
Truthfully I was planning on having a loaded Mexican sweet potato anyway, so this toast is just an expression of what I already had planned to make! I probably wouldn’t go this route again simply because I love my loaded Mexican sweet potatoes [I can’t stuff toast like I do the actual potato!] but I definitely can see myself using this “toast” method for breakfast ideas or snacks! Not to mention sweet potatoes are much cheaper than gluten-free bread…
