Happy thinking out loud Thursday!
I can’t start this post without mentioning the absolute destruction happening in Mexico and Puerto Rico. It seems like each week another natural disaster is occurring somewhere and it absolutely breaks my heart to see the destruction and loss. My thoughts and prayers are with all of those effected. It’s just yet another reminder that life is so short and we really should make the most of the time that we have.
Alright, let’s get random!
1 The first day of Fall is officially tomorrow – so get ready for all things pumpkin! Kidding – ok not really.
I have a feeling that you’ll actually begin to see a lot more oatmeal bowls around these parts, however until then I’ve been really enjoying having toast back in my life!

Side note about this toast – I think strawberries have officially reached their end date. Not only were these not very red but they also weren’t very sweet. So sad.
And while I’m sad to say goodbye to my beloved summer produce I’m also super pumped about the fall and winter goodies – give me all the squash!!
2 Speaking of squash and pumpkin, I was looking back at last year’s fall recipes and noticed that I actually didn’t post too many pumpkin recipes.
Last year’s pumpkin recipes included:

I’ve clearly got to up my game! That being said, I also found this old photo of a pumpkin pie smoothie and can’t for the life of me remember why I never shared it…
Just another recipe that was apparently lost in the shuffle!
3 Yet another reason to follow me on Instagram? To see me smashing my fitness goals! This week I not only moved back up to 155lbs on my squat but I also worked up to 5 full pull-ups, a goal I have been working towards for a while now!
I was so excited that I hit 5 pull-ups that I didn’t even realize until afterwards that I definitely could’ve given 6 a try too. Guess you know what I’ll be doing in the gym later this week! 😉
4 I was craving cookie dough the other day [not cookies, just cookie dough] so I whipped myself up a batch of my Chocolate Chip Cookie Dough Fudge.
Can we just take a second to pause and appreciate this?

I used oat flour with a bit of oats throw in to give the cookie dough a bit of a different spin and it was pretty much perfection, as I’m sure you can see from the above photo. I want to eat at least one of these chunks of goodness every day for the rest of my life.
5 My mom sent me a care package the other day that contained a few pieces of jewelry. Though it might not seem like it I actually have a bit of an obsession with unique jewelry pieces, especially tourquiose and coral pieces!
They fit perfectly with my inifinity ring, which is the ring that I bought for Bestie and I. I don’t plan on always wearing them this way, or even wearing all of them at once, but for now this is what I’m going with!
6 This was too funny not to share. The other day I was sipping my matcha latte and getting ready to dig in to an Oatmeal Raisin Cookie Bar when I noticed something…

My mug, plate and nails are literally all the same color! Now that I think about it, my KitchenAid [aka Stitch] and water bottle is also teal. Wait – is that teal or Tiffany Blue? I never know what to call it anymore. Regardless, teal/tourquoise/Tiffany Blue is clearly one of my favorite colors!
