Happy thinking out loud Thursday!
In case you were wondering, yes it is still sweltering hot. In fact today is supposed to be the hottest, at a lovely 112 degrees. Someone freaking save me….
1 A few of you have asked about the songs that I put on Daddy’s CD, so I figured I would share a few with you all so you can get a feel of how I like to make them and my thoughts behind each choice.
So what I do is write out the name of the song along with the artist name, then write up a brief reason why I chose the song or reflect on what the song means to me. Here’s what I wrote for a few of them….
Life Off My Years – Lee Brice
As I get older the more I want to collect memories and not collect “what ifs”. What’s the point of life, if you don’t live it?
Stand – Rascal Flatts
Life is basically one big beat down. The true test of courage is whether or not you choose to keep standing up, even as you see another hit coming.
Standing Outside the Fire – Garth Brooks
My hope for Brother and Sissy is that they choose to walk through the fires of life, even if it isn’t always the popular choice. I pray they are brave enough to continue pushing forward, even as the flames of life lick around them and scorch their feet.
Broken Halos – Chris Stapleton
God brings people into our life for a reason – sometimes it can last our entire lives and sometimes its just for a season of it. These “broken halos” are exactly what we need, when we need it. I only pray that I can be someone’s “broken halo” someday.
Boy – Lee Brice
It’s still hard for me to grasp that I’m going to need to let Brother go – that he’s going to head off to college and become a man. The only consolation I take away from the heartbreak of letting him go is that no matter where he goes and how grown he gets, he’s always going to be my baby brother.
And that’s just a few of the songs I chose. I didn’t share all of them because some of it gets pretty personal, but I think you kind of get the feel of it!
2 Speaking of Father’s Day, I whipped up some cupcakes for Daddy and I cannot wait to share them with you guys! Recipe should be up next week.
Coconut Lemon Cupcakes
Funny Story – Little Sissy spent the night Saturday so that she could help me make them. She helped herself to quite a few spoonfuls of leftover lemon curd, frosting and cupcake remnants – all before 9am.
I’m such a good representation of a health professional, aren’t I? 😉
3 Speaking of how great of a representation I am for good health, allow me to introduce you to my dinner the last few days.
Two of my all time favorite flavors!
In all fairness, I actually have been eating a really late lunch this week [like 3pm late!] which is a giant salad, so I pretty much deem this “dessert” – but eaten at dinner time 😉
Side note – I know that people hate on these “diet” ice creams a lot, and I agree that they aren’t the same as regular ice cream, but holy smokes y’all – these two flavors are incredible. Hands down my favorites from the two companies!
And oh hey look, more of that chocolate cherry combo I’ve been obsessing over!
4 It has been well documented this week my newfound obsession with quinoa. I’ve actually been having a ton of fun experimenting with it – both here and here – but may have found my favorite way to use it.
Chocolate Banana Breakfast Quinoa
Basically I just cooked my quinoa in almond milk with raw cacao powder, vanilla extract and maple syrup, then let it sit in the fridge overnight. In the morning I added more almond milk and topped it with banana and cacao nibs. DIVINE.
I’ve got some more plans for this beauty, so I’m not deeming it recipe worthy just yet, but get excited about yet another quinoa recipe coming your way!
And now if you’ll excuse me, I’m off to go take another shower because just sitting here typing this blog post has caused me to break a sweat.
