Ok so I’m kidding [sort of] but chocolate does help to ease the pain of a new work week starting. Though I’m pretty partial to Mondays myself, I know that not everyone loves them, so I totally understand the need to console and comfort yourself when it approaches once more. And while I know that most people reach for beer or wine, I prefer my comfort in the form of chocolate.
And what’s better than chocolate that offers a little more than just calories?
Which – totally isn’t to say that I don’t think you should just eat chocolate to eat it. I am very partial to honoring that craving – I’m just saying that you could enjoy some delicious, rich chocolate while also getting an added boost of nutrients.

Superfood Chocolate Cups! Do I need to say any more? 🙂
So – what makes these Superfood Chocolate Cups so super? The superfood ingredients, of course!
Though the chocolate cups themselves are made of basic ingredients – coconut oil, cocoa powder and almond butter – the toppings are anything but basic. With dry quinoa, hemp seeds, chia seeds and cacao powder, these tiny chocolate cups are loaded with health-boosting goodness!
And if I’m being completely honest here, the real reason for this recipe is not to comfort me for the fact that it’s Monday, but because Little Brother is officially off to college today. He was up bright and early to catch a plane, which means goodbyes were said and tears were shed. Lots and lots of tears.
And now I need to eat this entire batch of Superfood Chocolate Cups to fill the hole in my chest.
It’s not that I’m not happy for him, because I am. I’m proud of the work and effort that he’s put forth to get him to this point and excited for him to be able to play college football. It’s just that now every time I head over to Daddy’s something is going to be missing – at 6 feet tall and 250lbs, Brother isn’t hard to miss.
I know that I’ll get “used” to him not being here but I just can’t help but feel like I [once again] won’t feel complete until we are all together again.
All that to say, if anyone deserves some freaking chocolate today, it’s me.
So you’d better believe that I have plans on helping myself to a few of these superfood chocolate cups. Heck, I might even have a few after work, a few after lunch, some before dinner and some after dinner. There is no portion control on days when your heart is aching. Health Coach, fitness professional or not – sometimes we just need chocolate to help get us through the ache in our chest.
And now that I’ve officially depressed you all, let’s get to the recipe!
- ½ cup almond butter
- ½ cup cocoa powder
- ⅓ cup coconut oil
- 2 teaspoons maple syrup
- ¼ cup chia seeds
- ¼ cup quinoa, dry
- ¼ cup cocoa nibs
- ¼ cup hemp seeds
- Line a mini muffin tin with liners. Set aside.
- In a large bowl, whisk together the almond butter, coconut oil and maple syrup until smooth. Add the cocoa powder and mix until no lumps remain. Taste and add more maple syrup, as needed.
- Fill each muffin liner ¾ way full. Sprinkle with chia seeds, quinoa, cocoa nibs and hemp seeds.
- Place muffin tin in the freezer for 10 minutes to harden. Remove chocolate cups from pan, place into a container or Zip Lock bag and store in the frdige until ready to eat.
