Hot dang I am on a roll with this “eat more veggies” goal of mine!
Ok so in all fairness this Strawberry Cauliflower Smoothie doesn’t necessary count as eating, but my goal was simply to increase my overall intake of veggies, of which this smoothie helps to do. So, I call that a win 😉
And let me just give you a quick heads up right now – be prepared for an onslaught of all things berries.
Now that berry season is finally among us, I’ve happily been taking advantage of the huge sales at my markets. This week strawberries were on sale at 4 for $5. Can’t beat that! Side note – why can’t we celebrate produce seasons instead of Spring, Summer, Fall and Winter? I mean, Fall is basically known as Pumpkin Season anyway – wouldn’t it be an awesome way to raise awareness for in-season produce? Maybe more people would eat in season if they knew more about the produce that was available during those times!
Aaaand maybe I’ve just been up since 4am and my thought processing function of my brain isn’t really working all that great right now. Whatever 😉
So let’s talk about this strawberry cauliflower smoothie!
I know what you’re thinking, “cauliflower in a smoothie?” but please remember the major meltdown that happened when we first started putting spinach and kale into our smoothies. Now it’s totally the norm, right? Pretty soon cauliflower will be popping up on smoothie menus everywhere!
Ok so maybe not, but I still think it’s an awesome ingredient that you definitely need to try tossing into your smoothies. Much like the above mentioned spinach and kale, you can’t taste it at all – at least not in this smoothie! The cauliflower does however yield a really fluffy and creamy result, which is pretty amazing to me. Is there anything cauliflower can’t do these days?
Some quick benefits of cauliflower:
- Rich in vitamins and minerals. In fact, cauliflower has almost every vitamin and mineral that our bodies need!
- High in fiber – 3 grams per cup
- Good source of antioxidants, which help to fight against free radicals and cancers
And that’s just some of the benefits. Of course there’s also increased nutrition from strawberries, flaxseed and even coconut oil in this smoothie. #givemeallthenutrients
And while any berry could technically be used in this smoothie, I stuck with strawberries because they are my favorite. For right now, at least 😉
Does anyone else go through favorite fruit phases? I swear, I’ll eat my weight in strawberries for the next few weeks and then move on to something else. Just last month it was Cuties – I was eating 3-6 of them a day! And just ask Little Sissy about my love for baby carrots during the end of summer. I munched through multiple servings of them each and every time I watched her play volleyball [which was 2-3 times per week!]. I personally think it was my way of chasing away the nerves that I had for her!
For right now though, strawberries are my go-to snack, dessert and of course, smoothie ingredient. I’ve got another super delicious strawberry recipe that I can’t wait to share but until then you’ll just have to enjoy this Strawberry Cauliflower Smoothie. Seriously – go give it a try! - 1 cup almond milk
- ½ cup strawberries, frozen
- ½ cup cauliflower floret, roughly chopped
- 1 tablespoon flaxseed, ground
- ½ tablespoon coconut oil
- Optional Add-Ins:
- protein powder [choose plant-based to keep it vegan]
- yogurt [choose dairy-free to keep it vegan/ paleo]
- hemp seeds
- collagen [not vegan]
- Place all ingredients into a high speed blender.
- Blend on high until smooth.
