Happy WIAW and day before eat-yourself-into-a-come day! Hope you guys are all geared up for Turkey Day. I have got one full day today, so let’s get this party started! I decided to channel my inner Amanda this week and try out a yogurt bowl or two. They were tasty, but not quite my thing in the winter. I need warm food in the mornings right now!
After breakfast I got to prepping my dishes for the Turkey Day spread. I told my parents I would bring a healthy salad along with something to go with our morning/afternoon/night time coffee, so of course I opted for a dip-able cookie!
Spiced Pumpkin Biscotti
A perfectly spiced cookie that pairs well with any coffee or tea. Just dunk and munch!
1 1/2 C whole wheat pastry flour
1 C unbleached white flour
1 C sugar
1 tsp baking powder
1 T cinnamon
1 tsp pumpkin pie spice
pinch sea salt
2 flax eggs
1/2 C pumpkin
1 tsp vanilla
Preheat oven to 350. Mix together dry ingredients. In another bowl, whisk the eggs, pumpkin and vanilla. Add the wet to the dry ingredients and mix well. Flour your hands and lightly knead the dough. Form dough into a large log, about 1/2 inch think. Bake for 22 minutes or until center is firm to the touch. Let cool for 15 minutes, then slice. Bring the oven down to 325. Flip the cookies over to one side, and bake for 10 more minutes. Flip the cookies to the other side and bake another 10 minutes. Cool and dunk! Perfect for dunking!
I love how strong the cinnamon flavor is in these cookies. And they ended up being just the right amount of crunchy yet soft, which I am really enjoying! I may or may not be having one or two with my afternoon tea.
Along with the biscotti’s I am bringing along my go-to favorite salad. I love it so so much, so I’m really hoping my parents do to!
This dish makes me want summer back. I ended up eating two little cup fulls before I forced myself to stop. It’s seriously just so tasty!
Ninja went out for dinner, but was kind enough to bring me back something home (ok, I actually gave him money to go get me food after his man date, but whatever). I have been seriously craving mexican food for a while now, so I asked Ninja to hit up Chipotle for me!brown rice, veggies, black beans, chunky salsa and guacamole
This baby lasted all of 2.5 seconds before I inhaled it. I ate it so fast, even Ninja was shocked. Of course I was then unable to move for the next 2 hours, but it was totally worth it!
Now I’m off to complete the 85 things on my to do list before we head out at 3am tomorrow morning for daddy’s. I hope you all have a wonderful holiday, and remember, IT’S NOT ALL ABOUT THE FOOD!
