Sometimes you just find deals that change the entire outlook of your day. Today was one of those days.
Finds of the Week
I typically always enter a store with a plan in mind. It keeps me on track and saves me tons of money. If I didn’t have a list and a plan, I’d walk out with 10 containers of nut butter and a pineapple. The only thing I really needed today was more produce to get us through the rest of the week. I was pleasantly surprised with what I left with.

Now I’ve actually never had coconut water OR soba noodles, but how could I pass those deals up? I got to work right away with the soba noodles, and am proud to say I’m pretty sure this is my best dish EVER.
Soba Noodles with Bomb Peanut Sauce
The best pasta dish I’ve ever made and one I’m sure I will be making for years to come!
Ingredients:

8 oz soba noodles
-
1/3 C water or veggie stock
-
4 T natural peanut butter
-
1 T light soy sauce
-
2 T honey
-
2 cloves garlic, minced
-
veggies – I chose broccoli and carrots
Cook noodles according to package directions. Drain. Mix together remaining ingredients except for veggies. Heat sauce in microwave if needed. Pour over noodles and add in veggies. Toss to coat well

This is truly love at first bite. Maybe it’s my intense love for peanut butter, but I really think this dish is flawless. Oh and it’s amazing cold OR hot! I had a few bites right after I made it then stored it for lunch after my workout. I started shoveling it into my mouth straight from the container without even realizing it was cold and it was just as tasty. Give it a try people. So yummy!

I’ve never done peanut sauce on noodles, but I do love it as a dipping sauce for spring/summer rolls. Looks awesome as your dinner sauce!
