Craving s’mores but don’t want to bother with the heat or sticky fingers? Then these dairy-free & gluten-free S’more Chocolate Cups are for you! Just 20 minutes and 4 simple ingredients is all it takes to satisfy that s’more craving – any time of year!
I know that it’s August 2nd, but I’m really not ready to say goodbye to all things s’more flavored.
Let’s just focus on the first part of that sentence for a brief moment – it’s August 2nd, guys. AUGUST! When did that even happen? Didn’t the summer just start? Don’t take away my berries!!!
Ok sorry, minor breakdown moment. I’m better now.
Now I know that I literally just posted a s’more recipe last week but I couldn’t help myself with these s’more chocolate cups. No really, I couldn’t help it! I was sitting on my couch at 8pm Sunday night by myself when I just got hit with the biggest s’more craving. I was tempted to grab my supplies and make one via stovetop method but then I remembered that it was still 90 degrees out and the thought of standing next to a heat source, even for 20 seconds, made me want to cry.
So instead of heating my s’more, I froze it. Clever, right? I thought so 😉
And while there is no replacement for that melted marshmellow chocolate goodness that comes from a traditional s’more, I think that these s’more chocolate cups offer something entirely different but just as amazing.
Now of course traditional s’mores use only three ingredients – graham crackers, chocolate bars and marshmallows. These s’more chocolate cups are no different, except that we add coconut oil to the graham cracker crumbs to create the base. Only one more ingredient needed and no heat source required? Yes pleaseeeeee.
I opted to make these s’more chocolate cups in the mini version, which was genius on my part since I ate 3 alone while photoshooting them, but you can go ahead and do a regular sized cup if you prefer. It all depends on your will power – well, that and your freezer space. I didn’t have the room for my standard muffin tray thanks to Ninja’s ginormous ice cream container. Don’t worry, I ate some of his ice cream just to get back at him 😉
Marshmallow center perfection!
I was apprehensive with freezing these cups at first because of that marshmallow center. Will it freeze? Will I break a tooth biting into it? You’ll be happy to hear that my pearly whites are still intact – while these s’more chocolate cups do become frozen, the marshmallow center does not! It won’t be gooey like traditional s’mores but instead provides a light and fluffy contrast to the hardened chocolate.
They are pretty much perfection.
And while I prefer to keep my cups in the freezer [out of site out of mind does wonders for my waistline], they could just as easily be stored in the fridge. Just remember that chocolate does melt, so you won’t want to keep these on the counter.
Unless of course melted chocolate messes are your thing. In that case, go for it 😉
- 1/2 cup gluten-free graham cracker crumbs plus extra for topping
- 2 tablespoons coconut oil, softened
- 4 marshmallows, cut into 3 slices
- 1 cup dairy-free mini chocolate chips
- Line a mini muffin tin with liners.
- Combine the graham cracker crumbs and coconut oil until crumbly. Distribute mixture evenly amongst muffin cups. Press firmly into liner.
- Add one slice of marshmallow to eat muffin cup.
- Melt the chocolate chips in the microwave for 1 minute. Stir, then microwave 30 more seconds if needed.
- Distribute chocolate evenly amongst the cups. Sprinkle with extra graham cracker crumbs.
- Place pan in the freezer to set for 10-15 minutes.
- Remove cups from liners and enjoy!
