And just like that, Fall is gone and Winter has arrived.
Is anyone else super saddened by that? Don’t get me wrong I love winter time [aka Christmas!!], but fall is the season that brings about all those lovely holidays. Once fall is gone it’s almost like a countdown to the end of the year and the end of all the beautiful holidays. Boooooo.

So, who ate too much on Turkey Day last week? [raises hand up high] I’m pretty much still full from Thanksgiving, but it was a really good day with my family. Ninja and I spent basically the entire day at Daddy’s house watching football, eating food and then we even went on a family walk with all of the dogs. Pretty much my dream Thanksgiving!
But now Turkey Day is gone and it’s time for the Christmas countdown to begin. And yes – I did actually change my chalkboard from a Turkey Day countdown to a Christmas countdown. We are big on holidays in this house 😉
But lets talk savory sweet potato waffles, ok?
So these waffles were actually constructed weeks ago but they sort of got lost in the pumpkin shuffle. I’m not really upset about it, the pumpkin recipes were worth it, but guys these savory sweet potato waffles seriously need your attention now. Pumpkin season is over [take a breath and come to grips with that fact!] and all things hearty, warm and comforting have arrived.
And whats more comforting than a hearty, carb-filled waffle?
Alright – let’s talk ingredients.
These savory sweet potato waffles are made up of just 3 main ingredients:
- sweet potato
- coconut flour
That’s it! Remind anyone of my Sweet Potato Breakfast Pizza? Thought so 😉
But don’t let these simple ingredients fool you, these waffles are freaking amazing. With a generous amount of garlic powder and just a pinch of sea salt, the flavors of these waffles are really pronounced. Garlic and sweet potatoes kind of go hand in hand in my eyes, but then you top that combination with a runny egg, red onion and mashed avocado? Yesssss please!
That runny egg though….
I know that these savory sweet potato waffles are as basic as it gets, but I’ve realized something in regards to food and diet this year. I’ve learned that simple foods and meals really are the best. Sure, you can spend all night whipping up some fancy dinner with a zillion ingredients and I’m sure it’ll taste great, but will it really be as satisfying as something that takes half the ingredients and a morsel of the time? Wouldn’t you rather spend the other hour you lost with family? Wouldn’t you rather eat a meal that was made of simple, real ingredients?
I guess the end of the year really has me reflecting on a few things already, huh? 😉
And while I know the thought of a savory waffle might sound a bit weird, I promise that these savory sweet potato waffles will become your new favorite breakfast. It’s literally a breakfast vessel. Top it with whatever you want! It’s amazing regardless.
- 1 1/2 cups mashed sweet potato (about 1 medium)
- 2 eggs, whisked
- 2 tablespoons coconut flour
- ½ teaspoon garlic powder
- ¼ teaspoon sea salt
- 1 slice red onion
- ½ avocado, mashed
- 2 eggs
- salt & pepper to taste
- 1. Heat up a waffle maker. Spray it well with oil.
- 2. In a large bowl, mix together the sweet potato, eggs, coconut flour and spices.
- 3. Spoon half of the batter into the waffle iron and cook for 5 minutes. Remove waffle and cook remaining batter.
- 4. While waffles are cooking, cook eggs according to preference. Set aside.
- 5. Mash together the avocado,sliced red onion, salt and pepper. Set aside.
- 5. Once waffles are done cooking, top with egg, mashed avocado, more sliced red onion, parsley and salt and pepper.
