Creamy and delicious this Sausage, Kale & Potato Soup is a warm, comforting bowl of dairy-free goodness.
The jury has spoke and the verdict is in.
Though I did really like the crispness of the white back drop for this Sausage, Kale & Potato Soup, I have to admit that my heart was always set on this more rustic look. I guess I just needed your guys’ confirmation that I was picking the right one 😉
And while I am still not 100% happy with these photos [I still think everything looks too orange!] I really like the feel that they give off. Does that make any sense at all? Probably not…
But enough about the pictures – let’s focus on the soup at hand!
After posting my Kabocha Squash Soup a little ways back, I knew that I had to get back into the kitchen and create a different kind of soup. Not only have both of the soups I’ve posted been orange, but they’ve also both been blended soups. While I do enjoy a good creamy, smooth soup sometimes I want something hearty and chunky!
Enter in this Sausage, Kale & Potato Soup.
I will admit that I was hesitant about this soup at first. I mean it does contain sausage, an ingredient that I’ve never been too found of. However, since exploring food more and opening my mind to different things, I’ve began to really scour my grocery stores and have started reading labels of the foods that I typically shy away from. Sausage of course, being one of them.
What I found was that my store, Sprouts, offered a wide variety of sausages, most of which were all-natural, nitrate free, artificial ingredient free and low on the ingredients list. They also had turkey varieties, which is my preference when it comes to a choice between turkey or beef.
So armed with my sausage of choice [hehe] I headed home with the mission of making a delicious, comforting, chunky soup.
And what’s more comforting than potatoes?
I almost went for spinach as the greens in this soup, but kale won out as I feel it is studier and pairs with the potatoes and sausage better. Spinach would’ve been wilted and kind of blah in my opinion.
And though I was tempted to do so, I didn’t label this soup as paleo even though it is [technically] because the paleo diet doesn’t eat starchy vegetables – aka the white potatoes in this soup. It’s kind of one of those grey areas for me, but whatever. This soup is dairy-free however, with light coconut milk replacing any dairy to give the soup that creamy look and taste.
And my goodness is it delicious.
I actually have used coconut milk as the base for all of the soups on this blog which, oops, but I just absolutely adore the stuff if you couldn’t tell. I have another great recipe coming up that utilizes coconut milk and coconut cream – aka the mecca of combinations. That recipe will be coming at you tomorrow, so get ready!
All in all, this soup is creamy, chunky and incredibly flavorful. Rosemary is my go-to herb of choice – and it really shines in this soup! While the weather where I am might still be bright and sunny, you’d better believe this soup will be on the stove the second that the skies turn grey again 😉
- 2 tablespoons olive oil
- 1 yellow onion, minced
- 3 cloves garlic, minced
- 14 ounces smoked turkey sausage, chopped into rounds
- 4 cups kale, torn
- 4 large potatoes, peeled and cubed
- 32 ounces chicken broth, low-sodium
- 1 can coconut milk, light
- 1 teaspoon dried rosemary
- salt and pepper to taste
- fresh rosemary [optional]
- Heat the oil, onion and garlic in a large pot over medium heat for 5 minutes or until onions are translucent. Add the sausage and potatoes and cook for 2 more minutes.
- Pour in the broth and coconut milk along with the seasonings. Simmer the soup for 10 minutes or until potatoes are soft.
- Stir in the kale and allow to simmer until kale is soft.
- To serve sprinkle with fresh rosemary.
