Though making Daddy cry isn’t necessarily a difficult task [he’s very emotional when it comes to his children!], I take pride in squeezing out a few tears every Father’s Day. As I’ve mentioned several times, I always make Daddy a special CD for Father’s Day [thanks for your recommendations!] with songs from my childhood that we used to sing together as well as new songs that I think he can relate too or that remind me of him. It’s a fun dynamic between old and new – bringing back memories and sharing a bit of my heart with him through music. Some CDs are more emotional than others, however I try to make sure to always have one really deep and thought provoking song on there that tugs at the heart strings. Most of the songs also happen to be country, because that’s what I was raised on and its mostly what Daddy listens too, however I try to throw in a few random songs every now and then to keep things interesting.
Anyway, I think it turned out pretty good and Daddy seemed to really like it. Another successful Father’s Day CD in the books 😉
Alright – let’s get to this Quinoa Breakfast Parfait!
I’m going to go out on a limb here & make a bold statement – quinoa might be my favorite food of 2017.
I know it isn’t anything new – I’m well aware of it’s “superfood” status from a few years back – however it seems like I’ve just finally started to develop an effection for the pseudo-cereal. I guess it takes me a bit to warm up to things, huh? 😉
Regardless, I’m allllll about quinoa right now. Which is why I’m pretty excited about this parfait.
It also gives me another excuse to eat all the summer berries that I can get my hands on, not that I necessarily need an excuse. Although I must confess that buying multiple pints each week is starting to really clog up my fridge, especially when you take into account the cantaloupe and watermelon that I have taking up space. So not sorry about all the summer fruit I’ve been eating though – I’m going to eat it while it’s here!
So how do I combine my new found love for quinoa and my obsession with summer berries? In this Quinoa Breakfast Parfait, of course!
To even further increase the protein content of this recipe I went ahead and used plain Greek yogurt, however any yogurt can be used it its place. I’ve also made this recipe with a dairy-free yogurt base, however I really love the additional protein that the Greek yogurt provides, so that’s what I’m going with here!
In addition to the yogurt, you can also completely customize the fruit that you use. I can easily see myself swapping out the berries in the fall months for stewed apples and eating this as a warm breakfast parfait versus a cold one. The variations are really endless – one of the reasons why I just adore food!
So if you are looking for a new high-protein breakfast, look no further than this Quinoa Breakfast Parfait. It’s chock full of fun texture, filling protein and of course, perfectly sweet summer berries!
- 2 cups plain Greek yogurt, reduced fat
- 1 tablespoon maple syrup
- 1 cup quinoa, cooked
- ½ teaspoon cinnamon
- 1 teaspoon orange zest
- 1 cup mixed berries
- In a bowl, whisk together the greek yogurt and maple syrup. Set aside.
- In another bowl, stir together the quinoa, orange zest and cinnamon.
- To assemble parfait, layer yogurt, berries and quinoa together. Enjoy immediately or chill before serving.
- Parfaits can be made in advanced and eaten the next day.
