Oh Monday, I really really really don’t like you.
After tossing and turning all night and only getting about 2 hours of sleep, I woke up cranky as a bear. I managed to fumble my way to work, only to find everyone out of the office today, except of course me. I normally like being alone, but when I’m tired and alone the day just seems to drag on and on. I figured I would brighten my morning by walking over to the Target next door to my office complex at 8AM to grab a Starbucks.
But upon arriving, I noticed that there were no lights on in the Starbucks nook. I was then informed that somebody had called in sick and they were scrambling to open, but it would be another 45 minutes before they could open.
Needless to say, I moped back to my office. Sure, I probably could have slithered my way back over to Starbucks at 9 but being the only one in the office today meant that I was solely responsible for the phones. No tasty latte for me today.
And now I’m home (finally), skipping my workout because I’m about to fall asleep as I type this up. The funny part? I have no plans of taking a nap after this. Instead, I’m going to cuddle up with my pups, sip on some tea, and read a new book I just got until Ninja comes home. So before I fall asleep on my desk, here’s how I used up the rest of that can of pumpkin I had left over!
Fluffy and wholesome pumpkin loaded waffles
- 1 1/2 Cup whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 2 tsp pumpkin pie spice
- 1 Cup pumpkin puree
- 1 large egg
- 1 1/4 Cups almond milk
Optional: stevia to taste, chocolate chips, nuts, ect
Stir it, stir it, stir it up, stir it! Batter will be thick. Pour by 1/2C into a heated and well greased waffle maker. Makes 5-6 waffles.
Because this makes about 6 waffles (and I made these this weekend), I’ve been enjoying one of these tasty creations daily. I’m sure you’ll see what I mean when we get to Wednesday. My obsession with waffles is getting slightly out of hand. Or maybe it’s my obsession with pumpkin….especially considering that even my nails are coated in pumpkin colored polish. Ok ya…I’ll go with the pumpkin obsession.
