I want to talk about these Pumpkin Spice Caramel Rice Krispie Treats, and I will, but first I need to address my last post.
I am so unbelievably humbled by the responses I’ve received.
Your love, support and compassion as well as willingness to share your own personal stories with me has meant so much to me. I spent the weekend pondering my feelings in regards to the post itself as well as digesting the words from each and every one of you and I am truly honored to have such incredible readers and “friends”. I wish I could tell you that my feelings on the topic have been sorted out and that I am ready to once again attack the world with a full head of steam but that’s simply not the truth.
I am, however, inspired, motivated and dedicated to being better – in every aspect of my life.
I plan on putting more thoughts to
paper post this week on the topic but I’m not certain if the post will ever see the publish button. While I do want this blog to be a true reflection of myself I also want it to be a space of inspiration and motivation for others and if what I write is in anyway triggering, I feel like it may be best just to keep those thoughts to myself.
But let’s address those issues as they arise. For now, we’ve got a recipe to get too! 🙂
Allow me to introduce you to the newest submission for the Thanksgiving dessert table.
When Mom#2 was giving me ideas for Thanksgiving dessert, she brought up a really good point [good old fashion Mommy wisdom!]. Have the traditional pies and such but also have options that are more like finger foods – meaning cookies, bars, etc.
Taking those words to heart, I remembered that Ninja and Little Sissy both really loved my Chocolate Peanut Butter Krispy Bars so I decided to use those as inspiration for a new dessert recipe – which is how these Pumpkin Spice Caramel Rice Krispie Treats were born!
I considered at first making these krispie treats with marshmallows like more of a traditional rice krispy, however then I remembered how many marshmallows I will be consuming in my hot cocoa this season and opted instead to switch things up a bit. No joke, I think I need to invest in mini marshmallow stock with how many bags of those things I go through…
So anyway, ditching the marshmallows allowed for me to make these Pumpkin Spice Caramel Rice Krispie Treats not only gluten-free but also vegan, which gives yet another fun twist to the finished product. And while you could technically use any caramel sauce that you want to [similar to my Vegan Caramel Apple Crisp] , the dairy-free caramel that I use in this recipe is so simple and easy to make that I would really encourage you to give it a try! Plus it allows for the final product to be 100% vegan, which is always fun to tell your non-vegan family after they rave to you about how much they love the treats 😉

I think these Pumpkin Spice Caramel Rice Krispie Treats complete the list if I’m being honest, but I’ll let you be the judge. Try these bars out and let me know!
- 4 cups brown rice crisp cereal
- ½ cup almond butter
- ½ cup maple syrup
- ¼ teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- ¼ teaspoon sea salt
- ¼ cup vegan caramel sauce or caramel of choice
- Line an 8x8 baking dish with parchment paper. Set aside.
- In a large bowl, mix together the almond butter, maple syrup and vanilla extract until smooth.
- Add the cereal, pumpkin pie spice and sea salt. Stir until cereal is well incorporated.
- Add half of the cereal mixture into the prepared pan. Cover with wax paper and press down firmly. Spread caramel sauce over top and distribute evenly. Press remaining cereal mixture over top, using wax paper to evenly press down firmly into the pan.
- Place pan in the fridge to set for an hour. Slice into 12 bars.
