Happy WIAW! The weather is starting to cool down slightly, making me one happy girl. I’ve been enjoying my sweaters and fluffy socks at night, and have been sipping on hot tea the past few days WITHOUT breaking a sweat. It’s always a bonus when I can drink hot tea without sweating.
Can I just say how much I adore this months theme? I especially love the shout out to breast cancer awareness!
So for a while now I have been trying to come up with something quick and simple for Ninja to grab when he’s heading out the door for work to eat for breakfast. He usually takes a bagel and cream cheese, but that has got to be boring everyday, so I wanted to spice things up a bit and give him something fun. Here’s what my crazy mind went to!
Pumpkin Pancake Dippers
A pancake for those on the go. Along with a little container of syrup, these pancake dippers make the perfect breakfast for those on the run!
Ingredients:

1 C whole wheat pasty flour

1/2 tsp baking soda

1 tsp baking powder
-
1/2 T cinnamon
-
1 flax egg
-
1 C almond milk
-
1/2 C canned pumpkin
-
1/4 C chocolate chips
Mix together flax egg, milk, and pumpkin. In another bowl, mix flour, baking powder, cinnamon and baking soda. Add the dry to the wet and mix. Stir in chocolate chips. Preheat oven to 350. Pour into regular sized muffin pan or mini muffin pan. Bake 12-15 minutes. Serve with your favorite syrup!
NOTE: This recipe can be made with ANY pancake batter and toppings. Use your favorite pre-made mix and toss in some fruit, nuts, or even bacon. Get creative!
You can eat them like Ninja does..with the syrup in another container for on the go eating…..

Or you can eat them like I do, smothered in a coconut oil/maple syrup concoction!
Haha I ate that one on top before taking the previous picture if you couldn’t tell. Apparently my tummy is more impatient than my mind.
Ninja gave these little dippers a big thumbs up. I pack them for him each morning with a little container of syrup. So far I’ve made him whole wheat chocolate chip, blueberry and these pumpkin ones. Of course he prefers the ones with chocolate!

Dinner: turkey burger, swiss cheese, tomato and broccoli – Lunch: teriyaki chicken tacos with pineapple and avocado

GENIUS!!!! absolutely loving the pumpkin dippers… nice work lady! I am actually a better oven cooker than I am stove top, so this is right up my alley. You turkey burger looks so good, too, and now I want one smothered in cheese!

What a great idea! I always dunk my pancakes anyway, even if I’m eating them at home–I’m just a fan of dipping things! So a to-go option? Gotta try that. And I have to admit–I like plain pancakes the best–because then I can dunk them goodness and pour all sorts of fruit/nut/chocolate stuff on top. Yummm. Great, now I want pancakes, haha.
And in response to your comment on my blog–roasting red pepper is so easy! I just line a baking pan with aluminum foil, cut my peppers into pieces and lay them so the skin is facing up, hit “broil” and stick ‘em in the oven
Keep an eye on them, and in about five minutes, you have easy, delicious and sweet roasted peppers!

Omigosh this is seriously like the best idea ever! I love pancakes in general, but making them into mini muffins and then dunking them in maple syrup? Eeeee it makes me slightly giddy. I have to admit that my breakfasts have all been pretty quick and convenient lately. I Just never feel like cooking in the mornings, so I usually just have yogurt with cereal, fruit, and nut butter… and if I need it on-the-go, I throw it all into an old yogurt container and call it good
As for pancakes, maybe it’s boring, but I love simple buttermilk pancakes with butter and maple syrup. Can’t beat the classics…
