These simple no-bake Snickerdoodle Bites are packed with protein and are gluten-free, grain-free, vegan and paleo! Tastes just like a snickerdoodle cookie.
Even though I created these Bites and I know good and well that they aren’t, every time I look at these pictures I think that they are donut holes. I think that might be a sign that I need to work on a donut hole recipe, right? 😉
That being said, don’t let my apparent craving for donut holes distract you from these Protein Snickerdoodle Bites. I’m actually going to go on record right now and tell you guys that these bites are hands down my favorite that I’ve ever created. And I’ve created a lot.
So just what makes them so dang special?
Cinnamon – and lots of it.
I’ve made it known several times that cinnamon is my go-to favorite spice. Funnily enough though, snickerdoodle cookies aren’t actually in my top 2 of favorite cookies. You would think that with my love of all things cinnamon they would be, but nope! Though if I’m being completely honest, I’ve also never made homemade snickerdoodles before. I’m thinking I need to rectify that, huh? [yes – that is my way of saying I have a snickerdoodle cookie recipe in the works!]
Until those cookies come to fruition however, you’ve got these Protein Snickerdoodle Bites to tie you over, and I’m not pulling your pig tails when I say that they really do remind me of an actual snickerdoodle cookie!
Though it could just be that cinnamon sugar coating 😉
Have you ever created a recipe and immediately had a certain person in mind that you wished could try it? As soon as I took a bite of these snickerdoodle bites [or rather a scoopful of dough before it made it into Bite form] I instantly thought of Bestie. I’ve made her quite a few treats over the years [she loved my Vegan Cinnamon Roll Cake and Apple Pie Bites!] and I know that she would love the soft texture of these bites along with all the cinnamon flavor. In fact, I could imagine us enjoying them together with a huge mug of black coffee.
Bestie, can you come visit me now?
[ just pack the Nuggets in the truck, you know Auntie wants to see them too!]
Honestly, with how many batches of these snickerdoodle bites that I’ve made you would think I had plans on sharing them.
Guys – I’ve made and consumed 3 batches of these Bites in a week.
I really do think that I have a problem.
Granted, with these bites being grain-free, dairy-free and chock full of protein they make a pretty dang good snack [and post-workout treat, and late night fix, and 4am breakfast….]
My inspiration behind making these was actually the need to use up the huge bag of coconut flour that I have currently sitting in my pantry. I’ve also been making my Fudge Truffles and keeping them in the freezer for when the inevitable chocolate craving hits, but I wanted a no-bake snack that was full of protein and healthy fats for an afternoon snack as well – and these Protein Snickerdoodle Bites fit the bill perfectly!
These Bites contain:
- coconut flour
- protein powder of choice [ I used hemp ]
- cashew butter
- maple syrup
And that of course doesn’t include the simple yet totally not optional coconut sugar and cinnamon mixture that the Bites get rolled in. Sure, you could technically skip it but why on earth would you do that? These are snickerdoodle bites for crying out loud!
I don’t know how many batches of these I will end up making in this month alone but I can assure you that it’s going to be a lot. At least until I make another Bite recipe to obsess over that is!
- ½ cup coconut flour
- ¼ cup hemp seed protein powder [or protein of choice]
- ¾ cup cashew bitter
- ¼ cup maple syrup
- ½ teaspoon vanilla extract
- ½ tablespoon cinnamon
- For Rolling:
- 2 tablespoons coconut sugar
- 2 teaspoons cinnamon
- In a large bowl, mix together the coconut flour, protein powder, cashew butter, maple syrup, vanilla and cinnamon until smooth. Roll into 12-15 bites.
- In a small bowl, whisk together the coconut sugar and cinnamon. Roll bites into coconut sugar mixture.
- Place bites in the fridge to chill.
