Go ahead and swoon y’all because this bread is totally worthy of it. In fact, it might be worth a double swoon.
So Ninja was away this weekend, leaving me alone in our little house with our pups and this beautiful creation. Needless to say I struggled to maintain a one slice a day serving size, and by struggle I mean 100% failed. Whatever – I just didn’t want it to go to waste, you know? 😉 In fact, as I sit here and type up this post at 6am Sunday morning I’m munching on a slice along with some coffee. I’m about to test whether or not it will work as good workout fuel – carbs are carbs, right?
Anyway, though I hate when he’s away it also gives me a lot of freedom when it comes to recipe creating. I not only developed a few recipes for the blog but I also shot a few workouts – yes, workouts! I don’t know how I’ve been so neglectful to the fitness aspect of this blog other than my time management skills are slim to none. Apparently my husband has to go out of town for me to be able to get things done. I guess that just further proves how much I love him, right?
But back to the bread at hand.
Apparently the theme for my recipes this year is flavor pairs and triplets. I feel like a majority of my recipes have focused primarily on popular flavor combinations, such as my Caramel Banana Parfait and Chocolate Peanut Butter Protein Crispy Bars – heck, even the S’mores Bites from earlier this month! And now with this peanut butter chocolate chip banana bread that literally is a combination of three of my favorite flavors in the world – does it get any better than this?!
Other than the flavors of the bread, I must admit that my favorite thing about this loaf is its density. The loaf itself is fluffy but it is by no means light – the peanut butter gives it this thick density that really makes my heart sing!
Random tangent – I have a funny story about the word “light”. My older sister and I always used to make fun of my mom whenever we went out to eat because she would always mention how we needed to get a “light” appetizer so that we didn’t spoil our dinner or that she wanted a “light” meal. The funny part though was the item she typically ended up choosing wasn’t light at all – it was typically a deep fried appetizer or cheese stuffed main dish. Funny stuff.
To this day my sister and I make fun of her for it. Which is why she always tells us that if she would’ve had sons they would’ve adored her…
So when I say that this Peanut Butter Chocolate Chip Banana Bread is light, what I mean is that it’s actually really hearty and dense. No I’m kidding – it’s fluffy in texture but dense in taste. Wait, maybe I’m making stuff up now. Is that even a thing? Whatever…
The main point you need to take away from today’s post is that my older sister and I are horrible daughters and this bread is crazy addictive. Everything else you can just ignore 😉
- 1 cup gluten-free all purpose baking flour
- ½ cup gluten-free oat flour
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- 3 bananas, mashed
- ⅓ cup peanut butter
- ½ cup coconut sugar
- 2 tablespoons coconut oil, softened
- 1 tablespoon flaxseed + 3 tablespoons water
- 1 teaspoon vanilla extract
- ½ cup mini chocolate chips, plus more for topping
- Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
- In a large bowl, add the bananas, peanut butter, coconut oil, flax egg, vanilla extract and coconut sugar. Beat until smooth.
- In another bowl, mix together the flour, baking soda and sea salt. Add to the wet mixture and mix until no lumps remain. Stir in chocolate chips.
- Pour batter into prepared pan. Bake for 50 minutes to 1 hour or until toothpick comes out clean.
