Grab yourself some energy on-the-go with these Peanut Butter Banana Energy Bites! Gluten-free, dairy-free and vegan.
It’s been a really exhausting week y’all, and it’s only Wednesday. Send help.
I’m not sure if it was the little stomach bug I had this weekend or just the emotions behind Monday but pulling myself out of bed each morning this week seems to get increasingly more difficult. And now I don’t even have coffee to bribe myself with. Yep – it sort of, kind of sucks. That being said I’m also incredibly blessed, so I’m focusing on all of the things I have to be grateful for each and every day instead of how gosh darn tired I am.
For the sake of complete transparency with you guys, I’m going to admit that I eat a lot of Bites.
And by a lot I mean at least four a day. I typically always have some packed with me at the gym, either two or three, and will nibble on them after I’m done teaching and working the front desk. They make for the perfect pre-workout snack for those days when I have just a quick workout planned and are often my go-to snack when I need something really quick as I’m rushing out the door.
Which also explains why the amount of Bites recipes on the blog far outweighs any other category. #sorrynotsorry
I will admit however, that even though the Bites recipes far outweigh anything else on the blog I will still be adding to the list probably once a month. I just can’t help it! I love the dang things, so I might as well try out new flavors and such, right? 😉
These Peanut Butter Banana Energy Bites are far from being your normal Bites recipe though. Sure, they contain oats [as do 90% of my Bites do!] but they also contain brown rice crisp cereal, an ingredient that is increasingly becoming a favorite of mine.
Remember those Chocolate Peanut Butter Protein Crispy Bars? How about the Chocolate Caramel Crunch Cups from a few weeks back? Those recipes were only the beginning my friends – I’ve already got so many other ways to use the crispy cereal, I can’t wait to share them all!
Well, that all of course depends on if the recipes turn out or not. They always sound and taste good in my head – sometimes they just don’t equate to much in actual reality.
Thankfully though, these Peanut Butter Banana Energy Bites turned out just how I imagined them in my head – full of peanut butter and banana taste with just the right amount of crunch. And while I didn’t add chocolate chips to these bites [because seriously I’ve been adding chocolate to everything lately], I bet they would taste amazing with a few mini chocolate chips tossed in!

- 1½ cups gluten-free rolled oats
- 1 cup brown rice crisp cereal
- ¼ cup vanila plant based protein powder [I used pea protein]
- ¼ cup ground flaxseed
- ½ cup all natural peanut butter
- 1 ripe banana, mashed
- 2-4 tablespoons maple syrup
- ½ teaspoon ground cinnamon
- ½ cup roasted peanuts, unsalted, chopped finely [optional]
- In a large bowl, mix together the peanut butter, banana and maple syrup until smooth. Stir in remaining ingredients except for the peanuts. Stir until mixture just comes together.
- Form batter into 20-24 bites. Roll bites in crushed peanuts, if using.
- Store bites in the fridge until ready to enjoy.
