Is it seriously only Wednesday?
After getting up at 4am, teaching four classes, doing two photoshoots as well as the photo edits, writing up a meal plan for a client, prepping this post and prepping some recipes and posts for a challenge I’m running at the gym with my HIIT classes, I was basically running on fumes last night.
And guess what? I’m teaching 7 classes today! Needless to say these past few days have been insanely busy. Does anyone else tend to neglect themselves when they are super busy? I noticed yesterday that other than this PB&J Sweet Potato Smoothie, I didn’t eat anything other than a granola bar I found stashed in my gym bag until around 4pm. Oops?
Don’t get me wrong I am super blessed and so grateful for everything in my life right now [so much work!] but my nutrition has definitely been lacking – mostly because I’m just getting lost in the day’s events and forgetting about food! And I know what you are thinking, “How on earth can you forget about food, Kat?” Trust me, I never thought it was possible either but it apparently is when I get busy and stressed. Thankfully I’ve got my meals prepped and ready to go today so I’m hoping for a more consitent day of meals [as long as I remember to eat them]!
Which brings me to this ridiculously delicious PB&J Sweet Potato Smoothie.
I don’t often have insane days that leave me with limited time to cook a real meal, however they do happen and on those days I tend to gravitate towards easy meals – aka smoothies. I’m not one of those people who can have a basic smoothie though; if it’s going to be a meal it needs to fill me up for at least three hours. What better to fill the tummy and provide long-lasting energy than complex carbohydrates and healthy fats!
Using sweet potatoes in smoothies is new to me. It’s taken me a while to enjoy sweet potatoes in a non-savory form – in my opinion sweet potatoes were always meant to be topped with chili or dipped in ketchup! That being said I’ve really begun to enjoy the sweeter side of the sweet potato [HA!], which thus is how this smoothie combination came about.
I often make myself a PB&J stuffed sweet potato for breakfast. It’s quick and easy plus it travels well, which means I can take it with me to the gym to eat between classes if I need to. The last time I was eating it had me thinking though – why not try it in smoothie form?
And so I did 🙂
I’ve started tossing roasted sweet potato in my freezer to have on hand for later, which is what I used for the base of this PB&J Sweet Potato Smoothie. Steamed, mashed or roasted – the type of sweet potato really doesn’t matter as long as it’s soft enough to blend! I like mine frozen that way I can skip out on ice cubes.
And while most smoothies call upon bananas for that creamy factor, sweet potatoes do just as good of a job! This smoothie is sans banana but the sweetness comes from fresh or frozen strawberries, which is what is used as the “jelly” flavor. It’s pretty freaking amazing in my opinion!

- 1 cup almond milk
- 1 scoop vegan vanilla protein powder (or protein powder of choice)
- ½ cup cooked sweet potato (mashed, roasted, steamed)
- ⅓ cup frozen or fresh strawberries
- 1 tablespoon peanut butter
- ice, if needed
- Add all ingredients into a high-speed blender.
- Blend on high until creamy and smooth.
