Monday, we meet again.
Ninja and I had a great time this weekend with Little Sissy, getting dinner and hanging out Friday night before heading to an archery range on Saturday. Sissy’s birthday isn’t until February 7th but I wanted to do something fun for her, so Ninja and I planned this weekend as a bit of a “birthday weekend”. I think she had a good time if the amount of laughter I heard was any indication 😉
Ninja and I actually decided that every year for her birthday we would do some sort of “birthday weekend” celebration where we take her to do something she has never done before. This year was archery, which was a really good choice! She had a ton of fun and of course, she was pretty freaking good at it. I swear that little ginger is good at everything. Overall though the weekend was a success and we created a lasting memory, which was all I really wanted to do.

I know that most people [Little Sissy and Ninja included] prefer their pancakes to be chock full of chocolate chips but I’ll be honest, I’ve always preferred fresh blueberries. I actually prefer blueberries in a lot of things – muffins and other baked goods included.
But we will talk about other baked blueberry goodies some other day. Today it’s all about these paleo blueberry pancakes.
I’m actually still figuring out this new diet of mine now that I’m really working on my hormonal imbalance issues, but one of the areas I know that I need to address is my overall carb intake in regards to insulin release and blood sugar. I’m not cutting grains completely, I adore my beloved oatmeal far too much for that, but I am cutting back on them more and looking to make simple swaps in my diet where I can.
Like I said, still figuring it out out.
The point is, these paleo blueberry pancakes are the result of that. I’ve been trying to swap out my normal go-to flour of oat flour for almond flour or coconut flour and though I don’t have any plans to fully give up grain-based flours, I’ve found myself starting to experiment more and more with grain-free options.
So I guess what I’m saying is be prepared for some grain-free recipes 😉
But when they are as fluffy as these paleo blueberry pancakes, does it even matter if they have grains in them or not?!
I was honestly shocked with how fluffy these pancakes turned out. I mean just look at them! Of course looks can be deceiving though, so while I was excited about the fluff factor I knew it would all be a waste if they didn’t taste great.
Thankfully though, they taste fantastic.
Fluffy, soft and full of bursting blueberries – I literally couldn’t ask for anything else when it comes to a blueberry pancake! Oh and another bonus to these beauties is just how few ingredients are required and how much effort is needed. You could quite literally whip these pancakes up in your sleep, plus they only require one bowl and one whisk.
The only note of advice is to not over mix the batter. The key to any good fluffy pancake is to only mix the batter until everything is incorporated – any more than that can effect the fluff factor, so don’t do it!

- 1 cup almond flour
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt
- 4 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons maple syrup
- ½ cup fresh blueberries
- Heat a pan over medium heat.
- In a large bowl, whisk together the eggs, vanilla and maple syrup.
- Add the almond flour, baking powder, cinnamon and sea salt. Whisk until everything is well incorporated. Don't over mix! Gently stir in your blueberries.
- Pour ¼ cup batter into a hot pan and cook until bubbles appear before flipping. Repeat with remaining batter.
