Start your morning off with a plate of fall! These paleo apple cinnamon waffles are grain-free, gluten-free, dairy-free and paleo but still fluffy, light and delicious!
For someone who loves waffles as much as I do, I sure don’t make them a lot.
It’s been quite a long time since I used my waffle maker. I quite literally had to “dust it off” in order to use it. Yikes.
The reason why I put it away was because Mr. Waffle tended to eat more waffles than he produced and I was fed up with having to scrape off risidual waffles that never made their way onto my plate. I held that against Mr. Waffle for a while, until my cravings for waffles started to take over and eventually win out over my frustration. My stomach always wins in the end. 😉
Thankfully Mr. Waffle and I have worked out our differences and have come to the conclusion that we are better together than we are apart. Much, much better.
Hence these paleo apple cinnamon waffles.
Due to all of the recent waffle recipe flops that I’ve had I have sort of come to the conclusion that maybe it isn’t so much Mr. Waffle behaving badly as maybe its the type of waffle maker he is. You see, Mr. Waffle is a Belgium waffle maker – which basically means he makes ginormous waffles. Not all batters or recipe ideas work well in Belgium waffles makers [as I’ve figured out with all of my fails] so I think that maybe I need to invest in a smaller waffle maker. Until that day however, Mr. Waffle and I are going to work together to create some masterpieces. Or at least thats what Im hoping for.
In all honestly it took me three trials just to get this recipe right. I almost gave up [and tossed Mr. Waffle into the street] but he came through for me in the end!
Alright, lets break down these paleo apple cinnamon waffles!
I’m a big time breakfast person, as if you coudn’t already tell. If I had to have one meal for the rest of my life it would easily be some sort of breakfast dish. Just feed me oatmeal, waffles, pancakes, omelets, hashbrowns and smoothies and I’ll be a happy girl.
And if said breakfast just happens to remind me of my favorite season, well then that just makes it that much better. Truth be told I actually make these stewed cinnamon apples pretty much throughout the year. As I’ve said before, apples and cinnamon are one of my all time favorite flavor combinations so warm, soft cinnamon apples on top of fluffy waffles is pretty much a dream come true for me.
Obviously one of the best parts about waffles (and pancakes) is the ability to load them up with every and any kind of syrup, sauce and other topping you can think of. That being said, these waffles need one topping and one topping only – stewed apples [ok and maple syrup!]
I prefer my stewed apples to be warmed before going on top of these paleo apple cinnamon waffles, but cold is tasty too! Sometimes that contrast of a warm waffle and a cold topping makes for a fun combination 😉
While this recipe only makes 3 Belgium-sized waffles, I’m sure it would make more in a smaller waffle iron! I scarfed down my three waffles in as many days but I am thinking about prepping some more and freezing them for those mornings when I am in a hurry [aka running out the door to the gym]. While I typically have more than enough time to eat breakfast before I need to head to the gym, sometimes I’m a space cadet and forget all about it! Would it be weird to walk into the gym with half a waffle hanging out of my mouth? 😉
- 2 cups almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 tablespoon cinnamon
- 2 teaspoons maple syrup
- 4 eggs, whisked
- 1/3 cup applesauce
- 2 apples, diced
- 1 teaspoon maple syrup
- 1 teaspoon cinnamon
- 1 tablespoon water
- Heat up waffle iron. Spray with cooking spray or oil.
- Whisk together the eggs, maple syrup and applesauce in a large bowl. Mix in the remaining ingredients.
- Pour 1/2 cup batter at a time onto hot waffle iron. Cook as per waffle iron directions
- Mix apples, cinnamon, honey and water in a microwavable bowl.
- Microwave for two minutes.
- Serve warm apples on top of waffles
