Do you guys realize how long its been since I’ve shared a hot oatmeal recipe?
I’ve got plenty of overnight oats recipes but the last hot one was way back when I posted that S’mores Baked Oatmeal in July of 2016. 2016, people! For someone who claims to love oatmeal so much, I sure as heck don’t make a lot of recipes with it, do I?
Quick note in regards to that S’mores Baked Oatmeal; I actually made it for Little Sissy last year and she loved it, so if I can get my healthy-food-hating little sister to enjoy oatmeal I’m pretty sure that I can get anyone to eat the stuff.
That being said I highly doubt that Little Sissy would touch this Oatmeal Raisin Quinoa Breakfast Bowl with a ten foot pole. I honestly don’t know what it is about my family but they have this running joke about me and quinoa – every time I mention a new recipe I’m working on the first question is almost always, “Is there quinoa in it?”
Seriously, family – y’all are ridiculous.
But I guess they would be right this time. Well, sort of.
You guys noticed the title of this recipe, right? It’s an Oatmeal Raisin Quinoa Breakfast Bowl, which means that this isn’t just a bowl of cooked quinoa. While quinoa is tasty I’ve never been 100% a fan of the texture – some days I love it and some days it’s sort of off putting for me. Oatmeal on the other hand is never off putting for me, so I just went ahead and combined the two to create the ultimate breakfast bowl!
And I’ve gotta say, it totally reminds me of an oatmeal raisin cookie.
Not only is the texture perfect – thick & comforting – but it’s also perfectly spiced with cinnamon and subtly sweet. I tend to add a lot of raisins so you might want to scale back on yours if you aren’t as big of a fan, but I personally enjoy a good bit of raisins in each spoonful! It only adds to the texture and flavor in my opinion 🙂
And then of course there’s the nutritional aspect of this breakfast bowl.
Full of filling fiber from the oats, plant-based protein from the quinoa and plenty of vitamins, minerals and even healthy fat, this Oatmeal Raisin Quinoa Breakfast Bowl is a really smart start to your day. I’ve been enjoying it before my morning workouts and it was been keeping me full during my two hour workouts no problem. Talk about staying power!
Plus it’s super delicious, so there’s that too 😉
So if you’ve been wanting to try incorporating more quinoa into your diet but still aren’t sure how you feel about the texture, or you are simply looking for a way to spice up your bowl of oatmeal, then this Oatmeal Raisin Quinoa Breakfast Bowl needs to be on your to-make list!
- ¾ cup gluten-free rolled oats
- ¼ cup quinoa, rinsed
- 2 cups almond milk
- 1 cup water
- ½ teaspoon vanilla extract
- 1 tablespoon cinnamon
- 2 tablespoons maple syrup
- ¼-1/3 cup raisins
- 2 scoops Vital Proteins Collagen, optional
- 2 tablespoons hemp seeds, optional
- In a small pot, bring the oats, quinoa, almond milk and water to a boil.
- Reduce heat and cover, simmering for 15 to 20 minutes or until liquid has absorbed and quinoa has softened.
- Once liquid has absorbed, remove from heat and stir in remaining ingredients. Serve warm.
