Well my friends, the bites are back again, this time with a green twist.
I know ya’ll are probably sick of my obsession with these little bundles of nutrition, but I just can’t help it. I’m a sucker for an easy snack, but I’m an even bigger sucker for easy sources of nutrients.
Speaking of nutrients, I just want to reiterate how positive I am that going gluten-free was the right choice for me. I know some people don’t necessarily believe in gluten-intolerance and what not, but let me tell you, my body does not like wheat products. Gluten-intolerance or not, all I know is that I ate a baked good made with white flour yesterday and paid dearly for it with stomach cramps and pain all night long.
Which makes me love these healthy little energy bites of goodness that much more.
Speaking of energy, you guys have heard of spirulina, right? Well if you haven’t, let me be the first to introduce you to this superfood green-algae. Yes, it might be the scum off the bottom of a pond, but this stuff is pretty much a goldmine. Incredibly high in protein, antioxidants, and a good source of B vitamins, spirulina contains nearly every nutrient needed for the human body. It also contains a ton of chlorophyll, that good green stuff that helps removes toxins from the blood and boosts the immune system.
But wait – there’s more energizing ingredients to these energy bites!
I, of course, couldn’t make myself energy bites without that delicious chocolate flavor, so I once again called upon my beloved raw cacao powder and cacao nibs. This stuff is the real deal in terms of that deep, rich chocolate flavor and it’s also chock full of antioxidants. Raw cacao actually has more antioxidants than red wine or even green tea – plus, it’s yummy delicious chocolate. Score!
Not to mention, these dang things are super pretty. Am I right?
And since this is the season of all things peppermint, I just had to add some minty freshness into these energy bites. Does anyone else absolutely adore the chocolate and mint combo? I could eat it all day every day, so of course I just had to put those flavor combos together!
- 1 cup walnuts
- 1/4 cup almonds
- 1 1/4 cup dates
- 2 tablespoons raw cacao
- 1 tablespoon spirulina
- 1/2 teaspoon peppermint extract
- 2 tablespoons cacao nibs
- Place walnuts and almonds into a food processor. Pulse until finely chopped.
- Add dates, cacao, spirulina, and peppermint extract. Process until mixture comes together.
- Once mixture is well combined, pulse in cacao nibs.
- Place batter in the fridge for 20 minute or so to chill [or just roll immediately].
- Roll into 12 bites.
