Mini Taco Cups

Friday, oh Friday how I love thee. This week has been long and exhausting. Jax has been getting up at all hours of the night for some reason, which means I have been too. I’m just drained. And so ready to take a nap!

IMG_2726 I wish I had an explanation for why my puppy is asleep in her water bowl, but I don’t. Let’s just say she’s a special kind of puppy.

Speaking of recipes coming, I owe you guys a recipe don’t I? I believe I promised you a delicious Mexican recipe last week and then went and forgot all about it. Oops!

Mini Taco Cups
All the deliciousness of Mexican food, packed into one little tortilla shell!


  • 1 C cooked lean ground turkey
  • 1 C refried black beans
  • 1/2 C salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 C shredded cheese
  • 5-6 whole wheat tortillas

Preheat oven to 400. Using a large can or biscuit cutter, cut out rounds of tortilla (you’ll get about 3 per tortilla). Press into muffin tin. Spray tin before using if not non stick. Mix together remaining ingredients. Scoop into tortilla shells. Top taco cups with extra cheese, tomatoes, olives, ect. Cook for 15 minutes. Let cool and enjoy!

NOTE: I make these vegetarian a lot and Ninja doesn’t even notice. Just load up on the refried beans!

I’m not kidding when I tell you this is Ninja’s favorite dish. He asks for it weekly. His plate is always full when these babies are on the table! I usually get about 4, and he finished off the rest. You think I’m kidding. Sadly, I’m not.

    I’m a complete sucker for anything with salsa, avocado, and chips, so those taco cups are looking super good, even at 10 AM 😉 And as much as I love puppies, I definitely don’t miss all the work that comes along with them 😆 Hope you get some rest this weekend, love! <3

    That puppy photo is adorable!! My cat has fallen asleep in the litter box a few times..not quite as fact, not cute at all. HAHA. These taco cups seriously look awesome. I NEED to make theeemm.

    Jax is ADORABLE! I’m so glad to know that I’m not the only one who has a “special” kinda dog, haha!

    Love this taco cup idea. They look ridiculously good!
