Mini PB&J Cups

Happy Monday! Hope you guys all had a wonderful weekend. I had a bit of a stressful one. If you follow me on Twitter, you may have noticed my tweets were different from my usual self. I got hit with some news Friday night that rocked my world (in a bad way), but I am really just trying to give it to God and let Him be in control. There really isn’t anything I can do. I just have to trust Him, which is easier said than done!

Since I was down in the dumps this weekend, I decided to treat myself to a little retail therapy. I only have 1 pair of shorts to my name right now, so I hit up some stores to find some more for the upcoming heat wave this week!

$7 for the top and $10 for the shorts

I’m SO not a girly girl, but I really loved this shirt, even though it’s bright pink and frilly! I think I can pull it off..

This outfits much more my style. Neutral colors!
$5 for the tank and $12 for the shorts

I of course had to pick up these babies. The addidas are usually $30, I got them for $10 and the Nike Pro’s are typically $25, I got them for $12!

I also grabbed this dress for $12. I was thinking it may be too grandma-like? But it’s really growing on me! I think it’s perfect with some cowboy boots for my upcoming Rascal Flatts concert!

Another way I perked my mood up a bit this weekend? With chocolate of course!  I tried not to go too overboard, since I really didn’t want to feel sad AND guilty, so instead I made some homemade mini chocolates, packed with one of my favorite combos!

Raw Mini PB&J Cups
Mini peanut butter cups packed with one of the best combos in the world, peanut butter and jelly!

  • 1/2 C dark chocolate cocoa powder
  • 3/4 C melted coconut oil
  • 1/2 C honey or agave nectar
  • pinch sea salt
  • 5 T natural peanut butter (tends to be runnier, melt it first if it’s thick)
  • 5 T organic strawberry jelly

Line a mini muffin tin.  Mix together cocoa, coconut oil and honey. Pour some into mini muffin tins, enough to cover the bottoms well. Freeze for 10 minutes. Mix together peanut butter and salt. Add a spoonful of peanut butter to each tin, then cover with jelly. Smoosh down a bit to flatten. Cover with more chocolate. Freeze 30 minutes to 1 hour and enjoy!

Doesn’t get much tastier than this!

If it’s easier, you can always just melt some chocolate chips to use instead, but I really love getting in my coconut oil for the day!  Not to mention it makes the chocolate soo dark and tasty!  I always try to have a container full of these babies around to cure that chocolate itch. They really do the trick!

How do you cheer yourself up when your down? Retail therapy? Good workout? Spa day?

I LOVE those new outfits, Kate! Adorable. And chocolate helps everything, doesn’t it? I am so sorry, Sissy. God will work it all out for His glory. Trusting Him to work it out is hard, though! Love you.

:( Sorry you had such a bummer of a weekend. If I can be praying for you in any particular way, let me know … you can always email me (

On a happier note, those PB&J cups look so so good. Too bad my cupcake pan is in storage! Man, I can’t wait to move into our house haha!

  3. says

Praying for you love! It’s SO important to leave things in God’s hands, so glad you’re letting him hold you and guide you :)

Retail therapy ALL the way…topped with PB cups?! Ain’t nothin’ betta!

  4. says

Wow what a steal on all those adorable clothes!! You’re looking good sista! :)
And umm I think I maybe just died reading this recipe…I have to make these STAT!!

  5. says

Awww, I hope everything gets better for you girl!! Stay strong :) The dress is soo cute!! And I really like that pink tank. Where did you go shopping?? Such a good deal too! Smart shopper 😉 I also cannot believe those pb&j cups!! I need to make those ASAP!!

  6. says

I hope life is on the up and up now! I love the first top you bought–so cute and perfect for summer. And those PBJ cups? If they DON’T make a day better, I don’t know what would! I mean, wow. I’ve never made chocolates before, but that’s certainly tempting! If I have a bad day, I usually rent a trashy action movie and make pancakes. Because pancakes solve all problems, and there’s no better way to shut down the brain for a little than senseless punching by overly-muscled dudes with poor acting skills.

Oh my gosh!!! Those look amazing!!! Nothing wrong with a little retail, we all need it from time to time!! Especially at those bargain prices…I am such a bargain hunter when it comes to clothing!

  8. says

I would absolutely wear that dress! No gramma-ness about it! You’re right, it would look great with boots, but it would also be great with simple sandals (or barefoot!) worn at a picnic! Ah lovely. :) Also, I love your new girly top! So cute!

  9. says

I’m sorry you received bad news – my thoughts are with you – but it sounds like you have the right attitude about it!

Love you new clothes – they are hawt! The dress especially – and I think you can definitely pull off the tank!

And I truly LOVE your new clothes! The dress is great for the warm weather 😀

  13. says

I’m not sure if I have commented on your blog before, but I have been reading for awhile!

Sorry to hear you had a crappy weekend. But go the retail therapy. I can’t believe how cheap clothes are in the US!!!! So jealous!
