Mini PB&J Cups

Happy Monday! Hope you guys all had a wonderful weekend. I had a bit of a stressful one. If you follow me on Twitter, you may have noticed my tweets were different from my usual self. I got hit with some news Friday night that rocked my world (in a bad way), but I am really just trying to give it to God and let Him be in control. There really isn’t anything I can do. I just have to trust Him, which is easier said than done!

Since I was down in the dumps this weekend, I decided to treat myself to a little retail therapy. I only have 1 pair of shorts to my name right now, so I hit up some stores to find some more for the upcoming heat wave this week!

I’m SO not a girly girl, but I really loved this shirt, even though it’s bright pink and frilly! I think I can pull it off..

I of course had to pick up these babies. The addidas are usually $30, I got them for $10 and the Nike Pro’s are typically $25, I got them for $12!


I also grabbed this dress for $12. I was thinking it may be too grandma-like? But it’s really growing on me! I think it’s perfect with some cowboy boots for my upcoming Rascal Flatts concert!

Another way I perked my mood up a bit this weekend? With chocolate of course!  I tried not to go too overboard, since I really didn’t want to feel sad AND guilty, so instead I made some homemade mini chocolates, packed with one of my favorite combos!

Raw Mini PB&J Cups
Mini peanut butter cups packed with one of the best combos in the world, peanut butter and jelly!


  • 1/2 C dark chocolate cocoa powder
  • 3/4 C melted coconut oil
  • 1/2 C honey or agave nectar
  • pinch sea salt
  • 5 T natural peanut butter (tends to be runnier, melt it first if it’s thick)
  • 5 T organic strawberry jelly

Line a mini muffin tin.  Mix together cocoa, coconut oil and honey. Pour some into mini muffin tins, enough to cover the bottoms well. Freeze for 10 minutes. Mix together peanut butter and salt. Add a spoonful of peanut butter to each tin, then cover with jelly. Smoosh down a bit to flatten. Cover with more chocolate. Freeze 30 minutes to 1 hour and enjoy!




Doesn’t get much tastier than this!

If it’s easier, you can always just melt some chocolate chips to use instead, but I really love getting in my coconut oil for the day!  Not to mention it makes the chocolate soo dark and tasty!  I always try to have a container full of these babies around to cure that chocolate itch. They really do the trick!
