These Mini Bell Pepper Turkey Nachos are loaded with turkey taco flavors – in nacho form! With bell peppers for chips and dairy-free cheese, these nachos are gluten-free and dairy-free.
Yet another football season has come to an end.
Please tell me I’m not the only one super sad about that. I know I love sports more than your typical girl, but seriously, everyone loves some football, right? 😉
Well whether or not you watched the Big Game for the game itself, the commercials or to see what big spectacle JT was going to make of his half time performance, I’m pretty sure that we can all agree on one thing – it’s the ultimate snack foods day!
I was trying to get these Mini Bell Pepper Nachos up before the Super Bowl but with all the craziness of last week this recipe kind of got away from me. That being said I did enjoy these little flavorful bites yesterday during the game, so I figured better late than never! Not to mention I haven’t posted a savory dish in quite some time…
And seriously they are just so.dang.easy.
And delicious. Really, really, really delicious.
Traditionally speaking, each year for the Super Bowl Ninja and I typically do the “normal” football fan thing and pick up some pizza. While Ninja did get pizza for him, Daddy, Mom#2 and Sissy to share, seeing as how I’m gluten-free and now dairy-free as well, I opted to skip out on the pizza party this year. I considered making my own instead, however when I sat down and really thought about the things I was craving the first food that popped into my head was a plate of nachos.
And so these mini bell pepper turkey nachos came to life 🙂
I initially went back and forth on whether or not to make these nachos meatless.
Though I’m not a vegetarian or vegan, I do tend to choose meatless dishes when I’m cooking for myself simply because Ninja nearly always wants meat with his meals, so it not only saves us money for me to go meatless but it also gives me a bit of a break! Because these mini bell pepper nachos were basically going to be my meal for the Super Bowl however, I wanted to make sure they were packed with protein and other filling ingredients to keep me from getting too out of control with Daddy’s guacamole.
Y’all my dad makes the world’s best guacamole and I consider it a win if I can consume less than 1/2 a cup of it. Trust me when I say that my tortilla chips are fully loaded with the good stuff on each dip into the bowl!
The other awesome thing about these bell pepper nachos? Just how simple & easy they are!
The turkey itself is seasoned simply and cooked with salsa, which is a super quick way to load the meat with flavor quickly. After that nearly all the ingredients are mixed together before being stuffed into the mini pepper boats and baked. And there’s no long baking time either – just 15 minutes is all you need for hot, melty nacho goodness!
I topped my Mini Bell Pepper Turkey Nachos with fresh cilantro, olives and avocado, however the nacho toppings are seriously endless. Whichever way you decide to top them, just make sure to make plenty enough to share!
- 25 mini bell peppers, tops removed, sliced in half & seeds removed
- ½ pound ground turkey
- 1 cup black beans, canned
- ½ cup frozen corn
- ½ cup salsa of choice
- 2 teaspoons chili powder
- 1 teaspoon garlic salt
- 1 cup dairy-free shredded cheese or cheese of choice
- Optional Toppings:
- sour cream
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Set the bell pepper halves on the baking sheet.
- Heat a large pan over medium heat. Add the ground turkey, chili powder and garlic salt. Cook until no longer pink.
- Stir in the salsa, black beans and corn and cook for two minutes.
- Remove meat mixture from heat. Stuff each bell pepper with mixture. Once all of the peppers are stuffed, sprinkle with shredded cheese.
- Bake for 10-15 minutes or until cheese is melted. Top with optional toppings and serve.
