It’s the return of the Bite recipes!
Before we get to these Matcha Energy Bites I have to confess, this week is kicking.my.hard.booty. [no it isn’t kicking my booty hard, it’s kicking my hard booty 😉 ] I’m finding that I’m both thankful and frustrated that it’s only Wednesday – I have so much gosh darn work to do! I’m trying my best to not allow it to overwhelm me but hot dangggg I think I need to take a breather soon. In other words, I need the weekend STAT!
So after sharing those Turmeric Bites on Instagram last week [which I’m thinking of posting to the blog, just so that I always have the recipe!], I got bit by the Bites bug. HA! Say that five times fast.
Anyway, upon inhaling the last of my Turmeric Bites I was in the need for more snack bites. I try to always have some kind on hand, either tucked away in my fridge or stowed away in the freezer, just in case I need a quick snack. Since I work from home I normally can make something more substantial, however Bites and Balls are just so dang handy for snacks on the go. I almost always take a few with me to the gym and never travel without them – I even tuck a few into my purse when I know I’m going to be out all day! I mean let’s be real, you never know when hunger is going to hit, right?
So why matcha?
Well – why not matcha?!
While I may be a self-proclaimed chocolate addict and cake obsessor, I also believe in whole foods nutrition and the power of superfoods in the diet. I try my dang hardest to get in as many nutrients as I can during the day and snacks like these Matcha Energy Bites are just one of those super, stupid easy ways to do that.
They are also covered in chocolate dust [aka cocoa powder], so there’s that 😉
I actually used to sip a matcha latte almost daily, however I seem to have drifted away from it as the weather heats up. And friends, it is heating up in my neck of the woods! Let’s not even talk about how hot it is supposed to be this weekend [104 degrees!]…
But back to my delicious matcha lattes. Since I’m not drinking them regularly anymore due to the heat increase, I decided to use my matcha in a different way – meaning these beauties! I went ahead and paired my matcha powder with both coconut and chocolate, because the only thing better than two flavors is three flavors 😉
While store-bought Bites and Balls are a great option for when you are in a pinch, I truly think that there is nothing better than making your own at home. There are just so many varieties out there – each customizable in nearly a hundred ways! And of course my favorite part – no added fillers or artificial ingredients and flavors. Yet just another reason to make your own snacks at home!
These Matcha Energy Bites contain:
- shredded unsweetened coconut
- coconut oil
- matcha powder
- cashew butter
- maple syrup
- chia seeds
And that’s it! I chose to roll half of mine in raw cacao powder just for that extra chocolate antioxidant kick, however feel free to leave yours plain or even roll in more shredded coconut. Again – the options are endless.
I know that a lot of you have mentioned before that you’ve never tried matcha powder, so now I’m giving you the perfect excuse to purchase some 😉
Seriously guys – this stuff is magic. The amount of antioxidants it provides is incredible – it truly is a superfood worth adding to your diet! It also pairs well with chocolate, so need I really say more?
- 1 cup shredded coconut, unsweetened
- ½ cup cashew butter
- 3 tablespoons matcha powder
- 1 tablespoon coconut oil
- 2 tablespoons chia seeds
- 2 teaspoons maple syrup
- pinch sea salt
- cacao powder, for rolling [optional]
- Add everything into a high speed blender or food processor. Process on high until mixture comes together smooth.
- Set batter in the fridge for 10 minutes to chill and firm. Once its easy to handle, roll into bite-sized balls.
- Roll bites into cacao powder, if desired.
