I hope that everyone has all of their digits following yesterday’s Independence Day celebrations. We had quite the firework show here, with Ninja and Brother lighting the fireworks we bought and putting on a show for Daddy, Mom #2, Little Sissy and I. Little Sissy and I were both very pleased with the selection of fireworks this year – a few of them were pretty big!
Thankfully both Ninja and Brother walked away from the event without burning off their eyebrows or blowing off their hands – yet another year of safe fireworks in the books!
But enough about yesterday, let’s discuss today – because I’ve got a yummy recipe for you guys.
Who here loves eating pizza for breakfast? What about eggs?
How about a pizza made out of eggs? Because that is exactly what we’ve got here!
This Egg Pizza is made with a crust that is made 100% of eggs, then topped with seasonings, pizza sauce, cheese and of course, pepperoni! And let me just tell you guys, it.is.good.
Now while you could easily leave the eggs a bit runny so that you have a runny yolk in your pizza, I opted to cook my eggs fully. I wanted my pizza to be cheesy, not runny, so I cooked my eggs fully – however I bet runny would be just as delicious!
The great thing about this Egg Pizza [as with most of my recipes] is how customizable it is.
I sprinkled my pizza with mozzarella cheese, pepperoni and fresh parsley, but the toppings are really up to you! Chopped spinach, olives and red onion would also be fantastic. Play around with it – just have fun! Isn’t that the best part of cooking anyway? 😉
And while I don’t necessarily focus on low carb meals, this egg pizza just so happens to be low carb thanks to this pizza being “crustless” so to speak, however it is jam packed with high quality protein thanks to the eggs as well as the turkey pepperoni.
And though they tend to get a bad rep, I’m a huge believer in the inclusion of eggs in a diet – I really do believe it is a perfect food and a terrific source of whole food nutrition. It literally contains at least some small amount of every nutrient that our bodies need – I mean does it get more perfect than that?!
So if you find yourself craving pizza for breakfast but don’t want to derail your diet, I highly encourage you to give this egg pizza a try. Or just make it to make it because it’s super delicious and worthy of your time. Just sayin’ 😉
- 2 whole eggs
- ½ teaspoon italian seasoning
- ¼ teaspoon sea salt
- 2 tablespoons pizza sauce
- 2 tablespoons mozzarella cheese
- 5 turkey pepperoni
- fresh parsley, chopped
- Heat a skillet over medium heat. Add a small amount of olive oil.
- Gently crack eggs into the pan. If you want the eggs to be runny, do not break the yolk - if you prefer your eggs cooked through, break the yolk. Sprinkle with Italian seasoning and sea salt.
- Cook eggs until whites have begun to set. Add pizza sauce over top followed by a sprinkle of 1 tablespoon of cheese.
- Once cheese has melted, top with pepperoni and remaining cheese. Cover and cook until cheese has melted and eggs are cooked through.
- Sprinkle with fresh parsley before serving.
