Longest Fry In The World.

Happy WIAW! I’ve had quite the week so far. My body is literally HATING me actually. My 1st game of the season was on Sunday (we won!) and let me just tell you, my body was NOT prepared to play in 80 degree heat for 90 minutes. EVERYTHING hurts. It’s been 3 days of icing/heating/foam rolling/stretching and I am just now finally able to walk normally. Foam rolling by the way is the most painful thing I’ve ever experience right now. I literally force myself to do it every night. Guess I was more out of soccer shape than I thought!

Well, breakfasts have actually been changing over here for me. For some reason, all I’ve been wanting is pancakes. All the time. Everyday. I’m actually thinking about just making a few giant batches and freezing them so that I have them for whenever that craving hits.

Of course these pancakes are my go-to, because they are SO FILLING. I guess that’s what you get with 1/2C oats in the mix huh? But seriously, I eat these at 7am and don’t get hungry until 11:30.

I’ve been on quite the baby shrimpie kick lately. I got a bag of them on sale, so I’ve been eating them in various ways throughout the week. My favorite way?

IMG_3412Tossed with some quinoa, peas, spinach and feta. Alongside my new favorite snack of sugar snap peas and hummus

I remember growing up that my daddy used to grow sugar snap peas. I can remember being in the garden and filling a little basket full, then munching on them throughout my play time in the backyard. For some reason, I’ve completely forgot how much I love those little buggers!

Dark chocolate covered apricots. MAKE THEM NOW. All I did was melt a bit of dark chocolate (90% bar, I like it dark!) and dip away! I added almonds on some for a bit of crunch, but most were left plain. I’m also planning on experimenting with the dried mango and dried naners I have. Dark chocolate baths for everyone!

For dinner Ninja and I headed over to a restaurant called Good Stuff. This place is perfect for us, because it lets Ninja get his huge guacamole burger and let’s me pick from options such as fresh salads, veggies burgers, and even veggie stuffed burritos. I opted for a salad

This salad was amazing. It was one of those salads that actually didn’t even need any dressing, but the dressing was so dang delicious I just had to use it. I also snagged a few fries off Ninja’s plate.

IMG_3408 Ummm longest fry ever?! And as you can see, I had no issues at all finishing my salad.

And of course, no day is complete without some chocolate. Typically when I crave chocolate, a simple chocolate chip cookie or even chocolate ice cream won’t fix it. I need that rich, deep, dark chocolate fix. Which is why I created these!
