Lemon. I don’t know about you, but when I think lemon, I think summer. Well, the rain pouring down outside my window right now assures me it’s not summer yet, but that doesn’t mean my taste buds aren’t ready for it! I made these cookie last weekend for Bestie and I’s girl’s weekend, and I decided to make them again this week for my co-workers birthday. I know, I’m super nice like that.
Lemon Cornmeal Cookies
A light, crisp cookie, that screams summer
Ingredients:
- 1 C unbleached white flour
- 1/3 C yellow cornmeal
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp ground ginger
- 3/4 C sugar
- 6T butter, melted
- 1 large egg
- 1 T grated lemon zest
- 1/2 lemon, juiced
Preheat oven to 350. Combine dry ingredients. In another bowl, mix together butter, egg, zest and lemon juice. Combine dry with the wet ingredients. Drop by tablespoons onto baking sheet. Bake for 12 minutes.

Crunchy yet soft, with just a slight kiss of lemon. These cookies really have me dreaming of summer, although I’m not going to wish away the rain outside either! Instead, I’ll just spend my rainy day baking more lemon cookies. It’s kind of like the best of both worlds don’t you think?

Lemon is another really great summer flavor, although I can’t say that I’ve ever had it in the form of cookies – I usually go the lemonade route.
I love lemon, it makes me dream about summer too. Warm days and swimming! I love the cornmeal in these, very unique!
YUM. I used to eat lemons out of the glasses at dinner tables when we went out. My parents never understood why I loved them so much or how I could eat them without a pucker
