Happy WIAW! Thanks for all your well wishes with Jax. She’s doing better, but I’m still not happy with her cough. She’s been playing non-stop with Opie though, so at least she still has her spunk!
Those eyes get me every time!
This little girl has been quite the handful for us, but now that her and Opie are playing well together I’m feeling better about the entire situation. Now if we can only get the potty training down!
Alright let’s check out what I’ve been noshing on thus far this week!
Cereal topped with bloobs, almond butter and almond milk
Wheat toast with PB, greek yogurt and berries
Kettle Corn
Iced coffee
Tea
My favorite part of fall? CANDY CORN!
I thought these were just OK. The white chocolate was too overpowering to really get the candy corn flavor. Unless you eat them one at a time, then you can get more of the candy corn. But who eats M&M’s one at a time?
And my current obsession at this moment has been this quinoa salad I made. It’s so stinkin’ delicious. I’ve packed it for lunch everyday so far this week!
Kale & Quinoa Salad
A delicious salad that can be enjoyed hot or cold! Super simple to make, and loaded with protein and veggies!
Ingredients:

1 T olive oil
-
1 bunch of kale, stems removed and chopped
-
1 bunch broccoli florets, diced
-
1 clove garlic, minced
-
3 C reduced sodium veggie broth
-
1 C quinoa
-
1/4 C feta cheese
-
1/2 tsp sea salt
-
pepper to taste
Heat oil in large pan. Sauté all veggies for about 3 minutes. Add broth and quinoa. Bring to a boil, then cover and simmer 15 minutes or until liquid is absorbed. Season with salt and pepper. Toss with feta cheese and serve.
Oh gosh this stuff is so good. And so easy too. I threw all this into a pan and played with the puppies for a bit, checked on it, and it was done! No fuss no muss. Now if only I could find a way to get Ninja to try it…

She is such a precious little girl! Love her! PB and dark chocolate are my favorite M&Ms too. I always get annoyed because you can always find the peanut ones, but the PB ones are more rare and they are the best!

The first thought that popped into my head when I saw that picture of Jax was “Omigosh those eyes!” What a cutie. Glad to hear that she’s doing better, and that you guys are starting to get used to having her around. I absolutely love puppies, but the adjustment phase is always so stressful. Between the crying, and the pooping, and the extra attention… gah! How am I ever going to have children? Lol.
And M&M’s…

YUM! Quinoa and kale looks good! I have a container of chicken broth I need to use so this is a great recipe for it. THANKS! I secretly have a weakness for M&M’s.. I am scared to try the candy corn ones in fear of not being able to stop! ha! I love the pretzel and pB ones though!

awwww Jaxieeeee~I wanna squeeze her when I see those perfectly round eyes. Wish I had eyes like her–or maybe that would look creepy, lol. And I really don’t like regular M&Ms! But I love the peanut ones, but that’s to be expected.
Nope, definitely no way to just eat one M&M at a time. And I’m not a huge milk chocolate fan, so if I have a choice, I’ll go for a real dark chocolate bar. But I’ll definitely nom on any flavor stray M&M that rolls my way…

Ha Ha, so funny you mentioned those m&ms. Last year I literally called about 10 different grocery stores, and visited 5 + other pharamcies to find them. I did finally get them though, haha. I think they are delicious… but like you, they aren’t m&ms that you can down a ridiculous amount of.
I’m so glad to hear that Jax is feeling better! It’s the worst feeling when your fur baby is sick– I just wish they could communicate with us and tell us what hurts!
