Before we dive into this incredibly amazing Healthy S’mores Parfait, I’ve got to take the time to express my sincere gratitude and love for all of you who commented and messaged me in response to my last post. I spent a lot of time this weekend sorting through my emotions and thoughts and while I have a much clearer head on the situation now, I still find myself struggling a bit with it. I hope to have more thoughts to share with you guys later this week – once I can exactly pull them from my head and put them to paper.
Regardless, I am so incredibly humbled and grateful for such a wonderful support group. I was really nervous and hesitant about writing that post but once again, you guys just blew me away with your love. So truly from the bottom of my heart, thank you. As High School Musical once said, we’re all in this together 😉
Alright – now we must move on to today’s recipe because I literally cannot contain myself any longer.
Today is the last day of July [crazy!] and I have yet to post a s’more recipe this summer. Shame on me!
In all honesty, this summer just kind of got away from me. With being hired on as a fitness instructor at my gym on top of my freelance work, I haven’t had as much free “brain” time as I would like to focus on the blog, so recipes have fallen through the cracks a bit.
That being said, I couldn’t let summer pass me by without posting at least one s’mores recipe! 🙂
And let me tell you guys, if this is the only one I get to post this summer it’s totally good enough. More than good enough.
The recipe for this healthy s’mores parfait is actually fairly basic, which is what I think makes it so fantastic. Sure, you could substitute pudding for more of a “dessert” feel but I was wanting this parfait to be able to fit into almost any time of the day, so I opted for plain Greek yogurt. This also gives the parfait a nice dose of protein, making it a good breakfast option as well! And who doesn’t want chocolate for breakfast? [Bestie, you don’t count!] 😉
The real secret to these parfaits however, is that epic chocolate sauce! It is actually NuNaturals new Cocoa Syrup – of which I am completely and utterly obsessed with. They also have a Cocoa Mint Syrup which is just as fantastic. I use that one a lot in smoothies! And in case you were wondering, no this is not a sponsored post. I just really love these syrups and wanted to share!
The syrup isn’t 100% necessary for these healthy s’mores parfait, however I loved the addition of the syrup in the yogurt as well as drizzled on top. You could always use another syrup if you prefer – or mix up some coconut oil, cocoa powder and sweetener to drizzle!

And before you comment on the ratio of marshmallow to yogurt, I do realize that there appears to be a lot of mini marshmallows layered in there. The truth? I have a marshmallow obsession. No seriously – I’ve been going through bags of the things! I’ve had to actually start keeping the bags in the fridge though because my last bag got so warm in my pantry that the poor things actually melted into one giant mashmallow blob. I was quite upset about that – I literally had to scoop them out with a spoon! It was more like marshmallow fluff than mini mallows, and I seriously don’t know why I’m even telling you all of this…
Enough about my mini marshmallow problems.
These healthy s’mores parfait are too amazing not to be in your life. You need one – right now.
Made with gluten-free graham crackers, protein-filled plain Greek yogurt, antioxidant rich cacao powder and fluffy mini mashmallows, this parfait is the perfect dessert to round out the summer. So what are you waiting for?
- 2 cups plain Greek yogurt
- 3 tablespoons cacao powder
- 1 tablespoon NuNaturals Cocoa Syrup
- 2 gluten-free graham cracker sheets, crumbled
- ¼ cup mini chocolate chips
- ¼ cup mini marshmallows
- NuNaturals Cocoa Syrup, for drizzling
- In a small bowl, whisk together the greek yogurt, cacao powder and cacao syrup. Set aside.
- To make the parfaits, layer the graham cracker crumbs, yogurt, mini chocolate chips and marshmallows.
- Drizzle with more NuNaturals Cocoa Syrup, if desired.
