These Hazelnut Mocha Energy Bites combine the flavors of chocolate and coffee into one bite-sized treat! Free of grains and dairy, these bites are gluten-free, vegan and paleo.
And just like that it’s Fall!
We actually enjoyed Fall-like weather this weekend, with highs in the mid-70s, crisp morning air and late morning sunrises. I even got to wear a 100% fall-inspired outift of jeans, ankle boots and flannel – if that isn’t Fall then I don’t know what is! All I needed was a PSL in my hands, right? 😉
It might officially be Fall but I still don’t have any pumpkin recipes to share with you guys. That’s not to say they aren’t coming, because they totally are, but I’m trying to keep things balanced on this little space! Though if I’m being honest, posting another chocolate recipe and bite recipe [all wrapped into one!] does nothing for that balance. How many Bites recipes is this now? How many chocolate recipes?
Regardless, let’s start this week with some chocolate, shall we?
Well, chocolate and coffee if I’m being specific. Isn’t that just one of the best combinations you’ve ever heard?
I was actually doing some Spring cleaning [errr Fall cleaning?] in my pantry the other day when I came upon a bag of hazelnut flour that Sissy left behind when she was staying with me for a few months. How on earth did I forget about that stuff?
Now I know that not everyone likes hazelnuts. Actually, I feel like a lot of poeple don’t like them – just one quick Google search for hazelnut recipes will show you that! That being said, the hazelnut mocha pairing on the other hand is a completely different story, especially when we are talking about a coffee drink!
But I can’t make a coffee drink out of hazelnut flour. I was tempted to bake with it initially but for some reason I just couldn’t get the hazlenut mocha combination out of my head! I considered a hazelnut mocha quick bread but in the end my laziness won out – and another Bite recipe was created! 😉 Not to say the quick bread won’t be happening either. It might be….
Unlike the last two Bites recipes, these Hazelnut Mocha Energy Bites are grain-free. Because I had the hazelnut flour I figured I would go the grain-free route by pairing it with coconut flour, which works out pretty well in my opinion! I’m also preparing for the unavoidable amount of oatmeal that I am most likely going to be consuming this fall / winter, which is why I figured going grain-free with these bites was probably a good idea. I’m predicting that I’ll be buying oats each week just to sustain the amount of oatmeal bowls that is going to be happening when the temperatures start to dip. I can just feel the craving building. Does that happen to anyone else?
My rolling skills clearly still need some work.
While the hazelnut aspect of these Bites comes from hazelnut flour, the “mocha” aspect comes from raw cacao powder and coffee extract. I’m sure you could use actual brewed coffee if you prefer but I went the extract route here as it tends to be more potent with a less amount needed. It also makes me go, “mmmmmm” as soon as the cap is opened – I could literally sniff coffee all day long. Wait – does that make me an addict? [probably]
Alright, enough chit chat! If you are looking for a grain-free and vegan recipe that combines chocolate and coffee flavors into one blissful bite, then these Hazelnut Mocha Energy Bites are for you!
- 1 cup hazelnut flour
- 1 cup coconut flour
- 2 tablespoons raw cacao powder
- 2 tablespoons hemp seeds
- ½ cup almond butter
- ⅓ cup maple syrup
- 2 tablespoons almond milk, unsweetened
- 1 teaspoon coffee extract
- 2 tablespoons mini chocolate chips, dairy-free
- In a large bowl, mix together the almond butter, maple syrup, almond milk and coffee extract until smooth. Add remaining ingredients and mix until incorporated.
- Roll dough into 15-18 bites. Store in the fridge until ready to eat.
